There is another pork chop, a bit of roast, potatoes, mac and cheese, broccoli, white beans and cornbread. a bit of this and a bit of that.

If I am going to make them from scratch I use a bag of dry beans, I look them and soak them over night.
The next morning I drain them. Cover them with chicken or beef broth add a spoon of butter. Salt and pepper them. Bring them to a boil and then simmer them all day. I have to add a little water usually but that's ok. I add a little more butter and top them with onion. If I really want to amp them up I add pork jowl or bacon while they cook.
But tonight I opened a can of Luck's Great Northern Beans and a bit of butter and warm them up. Top them with onion.

Homemade Italian gnocchi soup, bruschetta from the garden and a loaf of good Italian bread from an Italian bakery.
The soup sounds wonderful. Do you share recipes?
I would if I could remember how the he<< I made it. It was in the freezer from two years ago (vacuum sealed so still fresh tasting). And I only use a recipe as a guideline. Sometimes I end up tweaking so much it that it barely resembles the original recipe.
I think that I used a bag or two of a Tuscan vegetable blend that had carrots, zuchini, squash, onions and peppers in a tomato based sauce (I may have added more of those too). There was crumbled italian sausage and homemade chicken stock. The gnocchi were from Aldi's. I think I cooked it stovetop and not in the slow cooker but you could do it there too.
ETA It was only from a year ago. Here is a picture before I added the gnocchi.

No, dinner sounds simple Italian. Good ingredients but simple. Nothing was actually cooked last night. The soup was from the freezer and was probably made with a combination of leftovers and fresh/prepped ingredients. (see other post here).
Dinner tonight is chicken cheese steak sandwiches. With fried onions. But on crusty dinner rolls from the Italian bakery that I bought yesterday. And possible buffalo sauce.
Made pasta and hot dogs for the boys, marinara sauce over cabbage and squash for me.
Can I eat with the boys? I promise I wont play with my food.

That does sound really good jlbear. I don't cook on Wednesday's because that's my grocery shopping night. I've got a recipe I'm going to try this week that I bought the ingredients for. Chef John's Swedish Meatballs. I love his recipes. He posts a lot of them along with videos on allrecipes.com. I have never found a recipe for swedish meatballs that I've liked, but this one looks good and got great reviews. I also plan on trying his Sherry Braised Beef Short Ribs. Just have to see if my local meat market has some good beef short ribs this weekend. Will update if I make them. I did his stuffed peppers last Saturday and they were fabulous! Posted pics on the old board.
I have been making a different kind of stuffed peppers lately - Polenta Stuffed Peppers.
Polenta-Stuffed Peppers
Polenta thickens as it cools, so fill the peppers as soon as it's cooked. If serving immediately, bake peppers right after they're filled (reduce cooking time slightly).
o4 red bell peppers, halved lengthwise through stem, ribs and seeds removed
Directions
In a medium saucepan, melt 1 tablespoon butter over medium-high. Cook onion, stirring often, until lightly browned, 5 minutes. Add 3 cups water, rosemary, 2 teaspoons salt, and 1/4 teaspoon pepper; bring to a boil.
Whisking constantly, gradually add cornmeal, whisking until incorporated before adding more. Reduce to a simmer; cook, whisking frequently, until thickened, about 5 minutes. Remove from heat; stir in corn, remaining 3 tablespoons butter, and half the cheese until melted.
Place peppers in a large baking dish; fill with polenta mixture. Cool to room temperature. Cover tightly with foil; refrigerate until ready to use, up to 2 days.
Preheat oven to 400 degrees. Pour 1/2 cup water in bottom of baking dish. Cover with foil; bake 30 minutes. Remove foil; sprinkle with remaining cheese.
Return to oven; bake, uncovered, until cheese is golden and peppers are very tender, about 30 minutes more. Serve immediately.
I am thinking taco soup and corn chips tonight. Seems perfect.

I might make some buffalo chicken wings and a veggie tray. Low carb and easy. Works for me.
How do you make your taco soup, Lily?
Oh my gosh it is so easy and so tasty.
brown a pound or two of ground beef(or turkey or chicken or what ever you prefer)
Drain
put it in a big pot
a can of tomato paste 8oz
a can of rotel (I use mild but which ever you like)
a can of whole kernel corn
a can of black beans
a can of diced tomatoes
a pack of dry ranch mix
a pack of taco mix
add some water to thin it down a little
simmer until hot.
Serve with shredded cheese, chopped onions, sour cream, whatever toppings you like. I will usually make cornbread to go with it but corn chips are good with it too.
I know you don't like the beans. I have no idea what you could sub them for. Rice maybe.

Our weather is perfect for it.
And I do cook my gr meat with onions and add some on top. I forgot that part. Some times I add peppers. Bell or banana to the cooking meat too.
