I think I will try it. With red bell peppers and onions.
Wont that be pretty for Christmas?

Well. I know that sautéing them are good. I might do a test batch.
I may just go for it. What's life without a little mystery?

I want something more festive for Christmas dinner this year.
So ham for sure and these green beans.
Sweet potato casserole and I need something else.
Suggestions would be wonderful.

Our traditional Christmas meal is roast beef with roasted potatoes, sausage stuffing, green bean casserole, butternut squash (not sure why but we just have it every year), and candied yams. Desserts are whatever someone else brings...lol

We do ham on Christmas day. Cheesy potatoes and ham and deviled eggs, and we eat at about 2:30 or 3. Then later on when we wat to eat again, we have shrimp you-know-what-tail, veggies and dip, prosciutto, and all kinds of yummy snacks.
On Christmas Eve we have homemade spaghetti and meatballs. My dad and the girls crank the dough through the machine for homemade noodles, we use the homemade sauce dad makes every September from fresh tomatoes, and I make homemade meatballs. It's to die for.
Next year, I want to do the traditional Italian feast of the 7 fishes. We have never done it (Mom and DD2 don't like fish) but if we make only a sampling of each fish dish and still make the homemade spags, I think we could do it. I am going to suggest it this year and see who is up for it. I will do all the work,I just don't want everyone to get mad when I make it. Lol

We usually do the same things for Christmas that we do for Thanksgiving. And I got to tell you, I do not mind having dressing and dumplins every time I get a chance. And we may have that again.
I am in the "if it is food I am good with it" category.

We had a church pot luck on Pastor appreciation day. Someone made a dressing and it looked amazing.
I got a nice helping of it and took a big bite. I think they accidently spilt the salt shaker in it.
Oh it was so salty I couldn't eat it. I was so sad.

I think stuffing and dressing are a little different. I don't have veggies or fruit in dressing. But I have seen it in stuffing.
Dressing is just jazzed cornbread. But I love it with dumplins and dumplin juice over it.

Dressing is cornbread that is crumbled and then has usually chicken or turkey broth added with onions and celery and seasoning and then baked again. It's more like a dry batter when it goes back in the oven to bake the second time.
I love it.

I also bake it until it's crumbly. See. It's very similar only you use cornbread (southern thing...lol) and I use breadcrumbs. The sausage is a little different but I've made it without and it's just called stuffing instead of sausage stuffing.

I have seen it. Stuffing that is. It didn't look appetizing. Could have just been that particular time. I don't know.

I'm not picking on it. I am sure yours is to die for.

The Feast of the 7 Fishes is 7 courses of fish. Some families do 13 dishes. I don't think we will go that far. You have fish because of the tradition of fasting before a feast day. Since the Christmas meal is so heavy traditionally, eating light the day before was not only a symbolic sacrifice, but easier on the tummy! Traditionally the meal is supposed to last all night until midnight when the baby Jesus is born. Most European meals last a LONG time, so this isn't abnormal.
In our family, I think we will just have a taste of each course. Traditionally one would eat a whole fish each course, but I just need a taste! Some of the courses are served with linguini, some with bread, so it can get quite heavy if you allow it.
I once saw a menu guide with meanings for each course. I should find it before next year.

We're doing Christmas early with my side of the family and are going out to eat. My in-laws will cook their standard meal on whatever day we do Christmas with them.
When I cook, I make: turkey, ham, plain mashed potatoes, loaded mashed potatoes, green bean casserole, sweet potato casserole, my cheddar bay biscuits, roasted carrots, deviled eggs, and pumpkin pie. Grandma brings: peanut butter pie and 2-3 other pies as well as rolls from my uncle's favorite steakhouse. Most of what I make is from scratch. After the meal, the family is sent home with leftovers.
ETA: Forgot to mention that DH makes his stuffing and I make his Grandma's stuffing. I do 2 batches of his Grandma's stuffing so I can bring a batch to MIL. MIL says that I've nailed her Mom's recipe. I took that as a huge compliment because it's impossible for me to taste her Mom's stuffing because her Mom is dead.

Haha...in New England dressing is known as stuffing. Really stuffing is when it's in the bird and dressing is when it's a side dish.
This was my understanding as well.
I dont like any fruit or nuts in mine. Just bread, celery, onion...the usual. Nice and boring.
This is what I thought as well. But I do mine strange. I mix both cornbread and bread crumbs. I also add apples, onions, cranberries, pecans, and spices. I generally leave the sausage out.

I'm not sure what I'm doing this year. My mom does Christmas Eve, and she's making ham. I have a chicken in the freezer as well as a large pork roast, so I'll make one of those. It's just the 6 of us, so we don't need a ton of food.
Last year I made braised beef roast and it was heavenly. One year I made roast beef and Yorkshire pudding, with green beans and wild rice. I also make a big breakfast for all, and my parents arrive at the crack of dawn to watch the boys open their gifts. So I have a breakfast casserole put together that I just pop in the oven while the gifts are being opened. Then we drink mimosas all day.

I am going to do standing rib roast , mashed potatoes , rolls , corn and salad.
This is what we usually have too. Only this year my mom couldn't find a roast the right size so she bought 4 2lb slabs that were cut off the bone. I found a recipe for a red wine sauce that we are going to try with it.

DD wanted to do mimosas this year. We will be at my parents' house though and my mom is a bit of a teetotaler. Her dad was an alcoholic so she prefers not to have it in the house. She doesn't mind when we crack open a bottle of wine with dinner, but mimosas would make her have a Miss Manners' fainting spell. Lol Husker would NOT be amused.
My grandpa was a happy drunk. He was the life of the party. He was fun sober too, but he wasn't a mean drunk.

We do a Christmas morning brunch with DD, DSIL, Little Man and DS. They say my quiche is quite good, so I'll do that again. And a fruit salad, and probably bacon (sorry flan).
I'd also like to do an oven baked French toast. Anybody know how to do this easily? I know you let it soak in the fridge overnight, then bake in the morning. If anyone has a good recipe please pass on.
