Yeah, I don't get that. Everyone has their own preference. DD likes it more rare, I think that's gross.

I've seen too many different presentations of "medium rare". I ask for it to be pink inside, not red. That usually works for me.

The more you cook it, the drier it gets. So I think that's the reason.

It's just delicious that way. I get mad when my meat isn't right. I would rather have blood all over my plate than none. On Christmas I did cook my prime rib a little longer though. It was too veiny.

Medium rare gets the meat hot all the way through without drying it out. Rare gets the outer portion hot, but the center (pink) is only warm, if that.

It isn't "overcooked" just because some food expert says it is. If I ENJOY eating it medium or medium well or even well done. It isn't "overcooked" but just my preference. A pool of blood is gross and disgusting. And, I can't stand the mouth feel of eating a rare or medium rare steak. And, the fat isn't rendered well enough. Soooo, if you want to call what I like 'overcooked" then I will call yours raw or undercooked! lol

The perfect way to cook a steak is to the preference of the consumer!

Mostly for us, it means medium rare (DH likes that), but for my liking, rare is best. If you can put a bandaid on that steer and save it...that's my preference!

Well done tastes like cardboard. A good steak shouldn't need any sauce like A-1. The juice IS the sauce.

 Yes.  I order it medium rare - if you are going to mess it up, please do it on the rare side.  I'd rather it moo than be usable for boots.

I'm also in the medium rare camp. I hate my meat overdone. I also don't like steak sauce but I do like sauteed mushrooms with it. Even better if they are cooked with some red wine.

SB, I'm not a fan of prime rib either. It is usually over cooked & fatty.

It is only in the past year that I started eating prime rib. Some Au Jus and horseradish and a big piece of Ned rare meat and I am a happy girl.

Most, if not all, top chefs refuse to cook a steak over medium rare.  You get the best flavor that way.

 

BTW, we are having Rib Eye tonight, Pittsburgh style.  You sear the outside using olive oil and the inside stays red and juicy...:)

Steak sauce on the table is a bad sign. I'm in the medium rare park. You don't want it red but still juicy? Let it sit longer. The redness goes away.

They do if its their restaurant.  There are a couple of places around here that serve you how they see fit.  They are ALWAYS packed, reservations take months to get, and they aren't the cheapest place. 

They think the opposite of you.  They are of the mindset that if you don't like their food, you are welcome to go somewhere else...

I agree.  They are few and far between, but I would never order a steak somewhere like that anyway.

G makes amazing steaks.  We barter for them.  Tonight, our hairdresser is coming over to do our hair in return for one of his steaks.  We get all kinds of mileage from that...biggrin

 A good steak doesn't NEED A-1, but it's always your choice to use it.  My DD10 loves steak, but mostly as a vehicle to get A-1 into her mouth.
