I know Bonny started this thread for her son's bday but I think it was JPT that suggested the cream cheese and whipping cream frosting recipe.  I used it on cupcakes I made today.  RAVE REVIEWS!  It was so good.  Light and not sickeningly sweet.  Thanks everyone!

1 bar of cream cheese, two cups of whipping cream, half a cup of sugar, two teaspoons of vanilla. Put in a bowl and whip until stiff peaks form.

The only thing I would add is that you probably need to keep it refrigerated after it's done. Just guessing but I can't imagine leaving cream cheese and whipping cream at room temp for any long amount of time would yield good results.

Do you whip the cream cheese and cream together at the same time? Or the cream first and then add the cream cheese?

I whipped it all at once. I put all four items in the bowl and whipped. It took a few minutes, literally just a very few minutes, and it was all fluffy and peaked. It was NOT hard.

While I was frosting the cupcakes though I dropped the spatula on my shirt and down my pants. Made a mess there! That was the worst part of all of it.
