i am making Cuban style pulled pork. I just realized that I am out of oregano. hmm

Would it be better to sub with parsley, sub with Italian blend(oregano, thyme, sahe, rosemary), or just leave it out??

Well parsley doesn't really give flavor does it? I would use the blend but I'm definitely not an expert

I think I would leave it out and taste test it first.

Use the blend on a small portion of it. If its not quite right, try using some cilantro, if you have it.
Parsley has eye appeal, but not much flavor, unless you are using Italian (flat leaf) parsley.
