Okie dokie. This pork shoulder is not going as planned at all. I just checked on it and some of the vidalia onions have turned blue!

i didn't put anything blue in the crockpot! are we going to be poisoned if we eat this?

I googled 'vidalia onions turning blue' and got a couple links about red onions turning blue in an alkaline environment. Perhaps vidalia onions do the same thing.

Ok. I read the list of ingredients, it's probably a result of the acid and the spices.

Did you put them in with garlic? Because if you did, the onions turn blue or greenish blue. It's happened to me. Nothing to be concerned about. The color is harmless.

Is there ginger in the recipe? Ginger will turn onions green. No harm - just a reaction.

I once put onions and garlic together in a mini-chopper then in teh crockpot. The result were blue/green onions. So I looked it up and saw it was a reaction between the two. Had no effect on flavor or safety.

Yes, there are onions and garlic in this recipe. It smells quite good. Still not cooked through!

Okay, we had a taste. It is very good! I can recommend this recipe.
But your onions might turn blue. They still tasted good.
