I googled 'vidalia onions turning blue' and got a couple links about red onions turning blue in an alkaline environment. Perhaps vidalia onions do the same thing.

Did you put them in with garlic? Because if you did, the onions turn blue or greenish blue. It's happened to me. Nothing to be concerned about. The color is harmless.
I once put onions and garlic together in a mini-chopper then in teh crockpot. The result were blue/green onions. So I looked it up and saw it was a reaction between the two. Had no effect on flavor or safety.
