I like it simple. A little celery, carrots, shallots, chicken and mayo. Salt, pepper and maybe some seasonings. I usually add the seasonings when I cook the chicken.
Curry, dried cranberries. mayo mustard, salt and pepper to taste. Onions and a bit of celery. Do not shred the chicken, dice it. Should be small chunks.
