Gotta get myself in gear. The kitchen
is a disaster - had to make dinner for
the Lodge brothers, and I was too
tired to clean up last night. Made
shrimp creole, rice, green beans,
salad, garlic toast for 30. Only a
smidgen of anything left.

Afternoon peeps! Worked this morning and it seems to drag into 24 hours. lol Hate when I'm not busy enough to make the day fly. Didn't sleep well either; only got about two hours. I thought I might nap but . . . TENNIS! I can't believe Fed is knocked out. Kudos to Anderson for a great match! It might be time for him to call it a day and hang up the racket. Nice to see Rafa still fighting through it. Should be interesting to see who he's matched up with for the final.

I think Roger still has a couple of good years left.smile

If Rafa gets the win, he'll play Novak on Friday in the semi-final.

That would be a tough match, for sure!

Yes, Novak and Rafa will be a good match but Del Po is giving Rafa a good run for the money today, especially in this fifth set. I'm almost rooting for Del Po but still want Rafa to succeed. lol It's just that poor Del Po is a great player but only seems to make it so far and then chokes, so to speak.

I don't doubt Fed has a year or two left but I'm still thinking he should quit while he's a head like Sampras did.

The guy in the office next to mine was yelling at someone so I got up and stood by my door to eavesdrop when the guy he was yelling at left the office and walked by and saw me. I got caught.

DH had the (small) remains of the
shrimp creole. I've frozen the rice
and the green beans. Salad tonight.
Lonnnnng soaking bath with Epsom
salts tonight.

Here is a combination of the recipes for
shrimp creole that I used last night for
the lodge. 19 diners donated a total of

gasp

$177!


FRANK’S SHRIMP CREOLE
4# shrimp 1# bay (small) scallops
1C minced onion 1C diced celery
1 green pepper, finely diced 1 stick
butter 4 cans petite diced tomatoes
4 small cans tomato sauce 4T
Worcestershire 1/2 t pepper 4 bay
leaves cooked white rice
(Frank was my Uncle - whenever he
made this for the Seniors Club pot luck,
he always had to personally serve it,
because the members would always try
to pick out the shrimps from the rice &
sauce !)

SHRIMP CREOLE – Southern Living 1996
1½# medium shrimp, peeled, deveined
2 large onions, finely chopped ½C green
bell pepper, chopped ½C chopped red
bell pepper ½C chopped celery ¼C
chopped scallions 2 garlics, minced 3T oil
16 oz stewed tomatoes undrained 8 oz
tomato sauce 2 bay leaves 1t Creole
seasoning ¼t ground red pepper flakes
hot cooked rice
Cook onion & next 5 ingreds in oil in large
skillet on med-hi heat 3 min until tender,
stirring often. Stir in tomatoes & next 4
ingreds; bring to a boil. Reduce heat,
cook 20 min, stirring occasionally. Add
shrimp; cook 5 min until shrimps turn pink.
Remove/discard bay leaves; serve shrimp
over rice. 4-6

Hint for Shrimp

If you need to feed shrimp to a large
number of people, here's a hint to
make it go a lot farther.

Using raw shrimps, peel and devein
them. Cut each shrimp in half from
head to tail.

If you are going to use them in a hot
dish, drop them in boiling water for
60-90 seconds - NO LONGER !

The shrimp halves will curl up like a
regular shrimp, and each guest will
think they are getting fresh (whole)
shrimps.

Be careful - the halves will cook a
lot faster than whole shrimps. Use
for shrimp creole, scampi, salads,
etc.
