We are slowly climbing out of the frozen tundra here. Not much planned for today. I do have some laundry and cleaning to do. I am staying out of the grocery store though. I will be crazy today and tomorrow and won't calm down until kickoff!

Have you tried Avocado Tuna Salad?
15 oz tuna in oil, drained & flaked
1 English cucumber, sliced
1 medium red onion, thinly sliced
1/4 - 1/2 cup minced cilantro
2 Tbsp fresh lemon juice
2 Tbsp extra virgin olive oil
1 tsp sea salt or to taste
1/8 tsp black pepper
In a large salad bowl, mix: cucumber,
avocado, red onion, drained tuna and
cilantro. Drizzle salad ingreds with
lemon juice, oil, salt & pepper.
