Another cold, rainy morning here, my pretties!

We dropped Jupiter off at the Vet at 7. She's having surgery to remove a tumor inside her eye lid. They are also going to x-ray her mouth. She's been having some pain and swelling. But the Vet couldn't get a good look while she was awake. So, while she is out...it will be much easier for him to see what is going on. Fingers crossed that it isn't anything too serious.

Needless to say, I'm a nervous wreck.

I'm going to try to tackle some more chores around the house, to keep myself busy.

If all goes well, we should be able to pick her up and bring her home by 6. (Cone of shame and all!)wink

Good thoughts and prayers would be appreciated! I will post an update later.

What's going on in your neck of the woods?

Prayers for Jupiter! Saturn, too! And Venus, etc.

Ran to the store to pick up a couple things I couldn't find at TJ's yesterday. We're having my parents over for dinner on Halloween. No trick or treating for the boys, but Grandma & Papa still want to get together. The boys want tacos. So I'll do a taco bar and pass the fixin's at the table. Wine in lieu of margaritas.

Still dreary here. I forgot what the sun looks like.

Prayers for Jupiter!!! Mittens is so thoughtful. Give her a good belly rub for me.

It's such a dreary day here. I was planning to get the Spring bulbs planted today but it's just to miserable out there. I'm off Saturday again and it's supposed to be more sunny. I think I'll wait. Today, I'm going to head back into the spare room and clean out the closet to put that stuff in the outdoor closet. It's stuff the grands want but aren't ready to take just yet. Then, I think I'm going to do some baking. I'm hungry for cookies! peanut butter and maybe snickerdoodles.

I have bacon in the fridge that's calling my name. I'll get that done and perhaps have a BLT for lunch. Maybe bacon and eggs. Hmmmm

You guys are making me hungry! Now I want bacon! And cookies!wink

The Vet just called! He said the surgery went well. He also took x-rays and got a good look in her mouth. Nothing looks bad. So he wants her to finish her antibiotics, and see if that solves the problem. They will call me when she wakes up. I imagine they will want to watch her for a few hours, before we can bring her home. But, I'm relieved that it's over.

So, what do you guys do with your bacon fat after cooking? Do you save it or toss it? If you save it, do you use it for other things?

I save mine and sometimes use it to cook scallops or shrimp with it.

What else can it be used for?

 I save it. It's liquid gold!biggrin

Many uses at our house! I fry sirloin steaks for Shop Cat in it.

Wilted spinach salad.

Wayne makes pea mash with it. (GACK! I hate peas!)wink

Birds in a nest, using bacon fat instead of butter.

Let me ponder...I can probably think of a few more things.biggrin

ETA:  For goodness sake...I fry eggs in it! The most obvious one! LOL!

I want to find lard for cooking. I can't find it. Does anyone know where in the grocery store it's located?

 I never looked for lard, FNW. I will check Kroger next time I go.

If it's not by the Crisco and oils, I would check the meat department.

Yeah, I checked both those places. I even looked in the ethnic aisle because I heard it was sometimes sold there. I've searched by the butter, too. Maybe it's sold in the frozen section, I haven't checked there yet.

 Don't drive yourself crazy. Google your store and see if they carry it. Or, ask at customer service.smile

(Walmart and Kroger carry lard. I guess not all stores do.)

 My neighbor used to go to the butchers.  My God he made the best pie crust.

 

Fry your potatoes in bacon grease.

When the bacon drippings are
cool enough, I transfer them to
an empty water bottle, and put
the cap on it. It can be stored
on the counter, or refrigerated.

Breakfast foods like eggs, home
fried potatoes, pancakes, sausage
patties, hash browns, etc.

Add to green beans with diced
potatoes and a little bit of onion
and diced pimento for country
green beans.

It has a higher smoke point than
butter, so it is a good substitute
when sauteeing.

Don't re-use more than once.

Crisco is also sold in "bricks" size of butter sticks. I find those in the baking aisle.

I don't like Crisco. It's plant based and used to be partially hydrogenated oil which I won't eat. I don't know if that's still the case.

Lard is sold at room temperature,
so you should find it in the baking
aisle, usually on the bottom shelf,
in either tubs or bricks.
