For those who would like to try something different - it WORKS !
1 new galvanized trash can with lid - medium size
extra heavy duty aluminum foil - 3 foot lengths
1 rebar rod
10-12 pound turkey, fully thawed
butter flavor cooking spray
large bag of charcoal
seasonings
oven mitts - 4
Start your charcoal in the lid of the trash can.
Lay two double thicknesses of heavy duty foil in an "X" on the ground. Pound in the rebar in the center of the X until it is firmly settled. length of the rebar will depend on the size of the turkey.
Wash and dry (and I mean REALLY dry) the bird. * Spray all surfaces with cooking spray, then add your seasonings.
Impale the bird on the rebar, legs pointing down. Upend the trash can, and put it over the bird.
Spread a layer of coals on the top of the trash can, and all around the bottom of the can, to a height of about 2-4 inches. start more charcoal in the lid now. Make note of the time.
45-60 minutes from the start, add more coals to the top and around the bottom of the can.
90 minutes from the start - take TWO people to remove the trash can. Be extremely careful - it is hot, and awkward to move. Use oven mitts to lift the bird from the rebar to a platter. Let it sit for 20 minutes. Carve and enjoy.
* I've even used a hair dryer on low to dry the skin,
If you use a new can the first time you try this, you can keep using it, as long as it doesn't get contaminated.
