We had our Eastern Star installation this morning, and the two items I brought were completely cleaned out! BLT Bites, and sandwiches on a pick.

BLT Bites
1 box (about 20) cherry tomatoes 1 package reduced sodium/no sugar added bacon, cooked until crisp 1/2 cup sliced scallions, including green 3Tbsp grated fresh parmesan 2Tbsp minced parsley 1/2C Miracle Whip
Cut the tomatoes in half through the stem end. Using the 1/4tsp spoon of a metal measuring set, remove all the seeds. Drain the shells upside down on paper towels.
Chop the cooked bacon in a food processor until very finely minced. Add the scallions, cheese, parsley, Pulse until finely chopped (you'll see why later). Add the Miracle Whip, and mix well.
Spoon into a forcing bag. Snip off the tip of the bag. You want the hole large enough for the bacon to pass through, but not so large that you get too much at one time.
Arrange the shells on a serving platter, cut side up, and fill with the bacon mixture, mounding it slightly.
Perfect for just a mouthful. Refrigerate until serving time. Can be made a day ahead, but assemble just before serving.
