 LOL, when DH traveled for business (frequently), we'd have feast of shellfish (he's allergic), and macaroni and cheese (he hates cheese)  DS and I would belly up to the fish counter and order seafood to make cioppino (complete with crusty sourdough bread).  The fishmonger would look in our basket, and ask "Hubby out of town again?!"biggrin

 

DH is leaving tomorrow for three days...I can't do mac and cheese, but I will do cauliflower and cheese.  Also shrimp...

 

Oh, and I am going to trash stuff too....he won't get back before the Friday trash pickup!

I'm making a meatloaf tonight, haven't done that in decades! Oh and roasted potatoes.

My wonderful MIL made the BEST
meatloaf! She tried for years to
teach me how to make hers, but
mine could never stand up to hers.
We could stand together, with all
the same ingredients, utensils,
and pans, put them in the oven
side by side, and invariably hers
tasted better!

Its her recipe for Bread & Butter
pickles that I'm using at the farm
stand with such success. My local
supermarket is having a sale on
canning jars - buy one, get one
1/2 off. I'm stocking up, getting
ready for Old Town Day in Oct.
when I can sell them. So far, I've
made three dozen jars. I'm hot! no

ENGLISH MUFFINS IN A LOAF!
2 pkg. active dry yeast 1T sugar
2C milk ½C water 6C unsifted flour
2t salt ¼t baking soda cornmeal

Mix 3C flour, yeast, sugar, salt & baking
soda. Heat milk & water till very warm.
Add to dry mixture, beat well. Stir in
rest of flour to make a stiff batter.
Spoon into two 8x4 loaf pans that have
been greased & sprinkled w/ cornmeal.
Sprinkle tops w/ cornmeal. Cover, let
rise in warm place 45 minutes. Bake
at 400 for 25 minutes. Remove from
pans immediately & cool. Slice & toast
like an English muffin.

I am really pleased with the English muffin bread. Turned out great, especially for my first time making it. I will definitely make that again. It only takes one rise as well so doesnt take a lot of time.

Trying a strata for the first time.

It has asparagus, spinach, onion, mushrooms, sweet peppers, and various cheeses I had shredded in.

Hope it's good.

Not sure.

That's just what the recipe said.

Found this.

Stratas are an egg, cheese, and bread casseroles that puff up when baking. ... A strata has the same ratio of liquid to eggs as a quiche, although traditionally milk is used, not cream. You can put anything into it that you would put into a quiche or frittata.Jun 18, 2018

 

There was no bread in mine.

 It was simple.

Browned a pound of sausage, drained.

Sautéed the veggies, drained.

Scrambled 10 eggs.

Stirred everything in, added the cheese.

Poured into 9x13 baking dish, covered with foil.

Baked at 375 for around 20 minutes, uncovered it, baked it another 15 minutes. 

When a knife inserted in the center came out clean, I just turned on the boiler and let it brown a bit.

 

So easy.

You're welcome.

You can add whatever spices you like, too.

I just used salt and pepper.

Next time, I think I'll add some cayenne, maybe.

I think basil would be good with certain veggies.

It's super versatile.

I always feel so proud of myself when I make my own spice seasonings. I just put together a container of Sazon. (I realized I was out of the Badia packets and was forced to create my own mix).

I made my own ranch dressing seasoning. it turned out quite well. And, then whenever i want to make some ranch i have it on hand to make fresh.

I bought one of those toaster ovens with rotisserie. Really, i just wanted the rotisserrie. I made 2 chickens yesterday. Watching that little chicken spinning around browning is a true joy!! lol

 More like he likes the directions on the back of the package.  I have not put directions on the jar.  I wing it, he likes instructions for stuff like that.

 They do. I use them with smashed avacado and Sweet Rays BBG sauce and some Mozz. Fantastic great dinner.

 

I had one of those toaster ovens to do my own rotisserie chicken but what a PITA to tie that sucker up so tight so it would fit.
