Baked pork chops, new potatoes with parsley
butter, and "slimy" okra - DH's favorite!

When you boil/steam fresh whole okra, it
takes on a "slimy" viscosity, which can be
off-putting to many people. To cut down
on the viscosity, add about a tablespoon of
vinegar to the water. It doesn't change the
taste, but it takes away a lot of the "slime".
I frequently use rice wine vinegar - very
light and not too "vinegary", but it does
the job.

Oven roasted pork steak, mixed beansonions over cornbread topped with green onions, mashed garlic and cheddar potatoes topped with extra cheddar, bacon, and green onions.

I try to stay away from desserts - too many
calories for both of us, and too many carbs
for my sugar level. If I have enough lee-way
at the end of the day, I'd rather have a glass
of Gentleman Jack

 For now, I don't have to worry about my sugar.

I do practice moderation. 

I'm also beginning to test flavor pairing for holiday desserts.

I've determined that tonight's cake will make really good cake pops for Thanksgiving.

I do prefer things made from scratch but some things are just as good from a box. I don't mind using box mixes for cakes. Much less mess and almost as good if not better.

 A recurring theme at the lunch we had after Mom's funeral was that our friend's when we were growing up always wanted to be invited to dinner at our house because Mom always had a dessert.

Box mixes have the dry ingredients measured out, all you do is add the wet stuff.

I use them and doctor them up.

Like I said, I'm planning on making cake pops at Thanksgiving.

I'm not making a scratch cake just to tear up.

I made some regular bread and some everything braided bread. DD said she was hungry for an everything bagel so I said i will just make it in bread form for you. She just had a big slice with some cream cheese.
And, I made some magic cookie bars, my son loves those.

I made chicken fajitas yesterday with my own seasonings. And, i made fresh pico de gallo, love the freshness of that with fresh jalapeno, lime, cilantro, white onion and tomatoes. Top with grilled peppers and onions, the pico, black beans, cheese, avacodo and sour cream. It was delish!

Burgers on the grill with buttered grilled buns. DD and DS2's GF wanted grilled chicken sandwiches so i made that for them. Got some really juicy delicious sweet corn and some cukes and other garden veggies. Yum

For the Saturday evening pot luck
at our chili cook-off, I made a side
dish of French Onion Soup Rice.

1 cup rice 1 can Campbell's French
onion soup 1 can Campbells beef
broth (both concentrated) and one
stick of butter.

Combine rice and both soups in an
8x8 baking dish. Slice butter into
pats and lay evenly on top of rice.
Cover with foil. Bake 30 minutes
at 350. Uncover, stir, and bake
an additional 30 minutes uncovered.

There wasn't even one grain left!

You are working, too hard, Momala.

Try my recipe.

Sherry Rice

 

One, 1 1/2, or 2 quart casserole, sprayed with Pam.

Add, 1 stick of butter. (Just, drop it in)

1 Cup of Uncle Bens converted rice, white or brown. It works, either way. (Just drop the rice, on top the butter)

One can, of Campbells, Beef Consomme. (Pour it on top)

1 cup of cooking Sherry, I use Holland House. It is usually next to the vinegar, in the baking isle.(Pour it on top.) Use cheap red wine, in a pinch.wink

Bake at 350, for one hour.

Don't cover it. Don't stir it.  Don't mess with it. It turns into yummy, all on it's own!

I just bought a pullman loaf pan. Which is basically a bread pan with a lid on it. Makes the bread more square for a better sandwich loaf. Here is one loaf in a regular bread pan and one in the pullman pan.

The loaf isn't as pretty to look at but once you slice it, makes nice uniform slices. You can find these pans on Amazon. Pain de mie

Somewhere around here is the breadpan my grandmother used. It's a long one. Makes a huge loaf.

But then again, she had 12 kids. The smaller loaf wouldn't last a meal.

Made French Onion Soup Rice
(March 18, above) and pinto
beans for the Senior Center, as
the meal being delivered is their
least favorite one. I can tell, not
only by their comments, but also
by observing when they throw out.
Buffalo chicken salad with NO
seasoning other than red pepper,
on a plain bun. Plain white shredded
cabbage with mayo (supposed cole
slaw) and canned pear. Everything
was white. Yuck.

I made 4 pounds of pinto beans,
and 3 recipes of the rice. Not a
grain or bean was left!

I can't believe the menu the Food
Bank puts out for the seniors. I
understand that chicken is a lean
and inexpensive protein, but why
do they serve it two days in a row,
back-to-back?

Sept 16 &17
Sept 25 & 25
Sept 20/Oct 1

I'm surprised they never offer
mashed potatoes. Commercial
mashed are inexpensive and go a
long way. I'm also puzzled as to
why they don't serve pork - it
goes a long way, and travels
well.

Oh well.
