Made a dish to bring to our 2nd Sunday Lunch
tomorrow. I doubled the recipe, and had
enough for DH & me, plus lots to bring to church.


CHICKEN CACCIATORE - a la Momala
½t black pepper 1t dried minced garlic/
garlic powder 1t marjoram ½t oregano
½t rosemary,crushed ½t thyme ¼C flour
1t salt 1# boneless chicken, 1” cubes 3T oil,
divided 8 oz button mushrooms, sliced 1
med. onion, chopped 1 green pepper, chopped
1 red pepper, chopped 14 oz can diced tomatoes,
undrained 8 oz tomato sauce
Mix flour, s/p. Coat chicken. Heat 2T oil in large
skillet on med-hi heat. Add chicken; cook & stir 5
min until lightly browned. Remove from skillet.
Heat remaining 1T oil in skillet. Add mushrooms,
onion & peppers; cook & stir 5 min on medium
until tender. Stir in remaining ingreds & spices.
Bring to boil, stirring frequently. Add chicken.
Reduce to low; cover & simmer 5 min until heated
through. Serve over cooked pasta or rice.
(I added dried parsley)

DH really liked this. I served it over wide noodles
with a side of boiled okra and a tossed salad.

I made wings tonight. I just deep fried them and then tossed in sauce. Honestly, so much better than when I do them in the oven!

First complaint about Hello Fresh. It was a chicken and roasted tomato spaghetti meal. The spaghetti should have been angel hair and a lot less in how much there was. The roasted tomatoes were an awesome substitute for sauce, so much better. The chicken was great.

Yesterday I made chicken and dumplings.

Tonight it's leftover/find it night.

I had scrambled eggs with pepper jack and cheddar cheese, and mini bagels with cream cheese.

Still working on the bagel.

It's a spice mixture. You can buy it in the hispanic aisle, or make it yourself:

1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground anatto seeds (achiote) or turmeric (I use tumeric and it's yummy AND healthy!)
1 tablespoon garlic powder
1 tablespoon kosher salt
2 teaspoons oregano
1 tsp ground black pepper

I guess I have in the sazon mix I have purchased, but not separately. I just used tumeric in the blend and it tasted fine. I use tumeric occasionally, not often, but I understand it has some great health benefits.

 I got some really good peccorino romano at the local meat market.  And, I sauteed some chicken to add to it.  I need MEAT with my pasta!

Wanted some easy comfort food,
so made the following with what
I had on hand.

Momala's Baked Macaroni & Cheese
1 box Mac & Cheese 2T butter,
melted 1/2 C chopped onion 1# can
petite diced tomatoes 1T dried parsley
flakes 1/2 t salt 1/4t pepper
350 oven. Cook pasta, drain, saving
some of the pasta water. Saute onion
in butter til just tender. Add tomatoes,
parsley, s/p. Simmer uncovered 5 min.
Remove from heat, stir in cheese packet.
Heat slowly, stirring constantly, til
thoroughly blended. Gently stir in pasta.
Pour into greased shallow 2 qt. baking
dish. Bake 20 min at 350.

It is way more economical to buy a cow and butcher it like that. A good freezer and proper portioning can make life super easy.

I buy meat at our local meat market and then I come home and repackage it. I will buy 10lbs of hamburger and then portion it into 1lb packs for using when i need ground beef. And then some of that i make into hamburger patties and freeze. Same with chicken, if i can get some boneless skinless breasts, i filet those into small filets, tenders and then i slice some into chunks and i package all of that in an easily usable way. DD likes having diced chicken ready to go and she make a quick sauteed meal.

I bought the ingredients to do taco's tomorrow for Cinco Dimaio, May turn into nachos, eh same thing. Had to go to the butcher to get the ground sirloin since the grocery store had none.

I may make the salsa tonight so it can marinate and taste better tomorrow.

What did you use to saute the
mushrooms? Oil? Butter?
Margarine? I've found that
bacon drippings marry well
with mushrooms. If you're using
store-grated parmesan, you need
to add it early in the recipe, to let
it amalgamate with the rest of the
ingredients.

CHICKEN SPAGHETTI

Coming from the North (NY &
NJ), I had never heard of this
wonderful comfort food. I've
been tinkering with several
recipes, and I think this one
tops the list.

CHICKEN SPAGHETTI
Meat from one cooked chicken
16 oz spaghetti, broken in half
8 oz mushrooms, chopped 1 large
green pepper chopped 1/2 large red
pepper, chopped 1 medium onion
chopped 1C celery chopped 2 cans
mushroom soup 2 1/2C shredded
cheddar s/p to taste

350 oven. Cook chicken, s/p, celery
& onion in water to cover. Remove
chicken, cut into bite-size pieces,
discarding skin & bones. Cook pasta
until done in broth from chicken.
Drain spaghetti, saving 1C water if
needed; add all remaining ingredients
except 1C grated cheese. Pour into
9x13 casserole. Sprinkle w/ remaining
cheese & bake 45 min until bubbly.

I've found that this fills a 9x13 baking
dish + an 8x8 dish (to give to friends)
I've often substituted a 2 oz jar of
pimento for the red pepper.

If you make this, please let me know
(good and bad). I'm thinking of
entering this for a local cookbook.

You'll need a very large bowl to mix this.

 Lots of butter, but I think the pan was too hot and seared some.  Not the biggest problem - I couldn't figure out a light sauce.  Tossed olive oil and seasonings.  Boring.  Would die in a restaurant!
