I made a big spiral ham, roasted red potatoes, squash casserole, and collard greens. Crescent rolls, too.

I made stuffed pork cops. They were good but we couldn't finish them. The pork chops were huge from BJ's.

 Well. You buy about a pound per person, it's going to cook down to about a cup per person.

Fill your sink or wash tub with water, put your greens in and let them sit about an hour, be sure to agitate them every ten minutes or so. 

After an hour, take them out, clean your sink, and do all that again. You do this until all the dirt, sand, and bugs are washed off.

Once your greens are clean, lay them out on the table, counter, any where, so they can dry.

After they dry, and yes, you can pay them dry, it's time to pull the stem. You might want to wear gloves, cause these suckers can have tiny hairs that will make your hands itchy and red and maybe swell. You take the stem in one hand, and pull the leaves off with the other. Discard those stems, they ain't good for nothing.

In a large cast iron dutch oven, put a good glob of bacon grease, while that is melting, dice half an onion, put that in the pot, add 2 cloves minced/mashed garlic, and red pepper flakes. While this is cooking, chop the greens. Once the onions are translucent, add the greens a handful at a time. Letting it wilt down. Add all the greens, stirring well each time.

After you have all the greens in, and wilted down, add about a cup of chicken stock or broth. More if it doesn't cover the greens. 

Let this simmer a good 4-6 hours, adding stock as you need it. It should cook down, but you need the liquid.

When the greens have reached the desired tenderness, you can season with salt, pepper, red pepper flakes, add bacon if you like.

That's how my granny taught me.

And then she said, "or you can get your favorite can of greens at the store, and not spend all day making greens. 

I'd say 99% of the things she made was 100% made from scratch, but she hated making greens.

Sounds delish! Thanks for the recipe!

I actually made my own spaghetti sauce. A friend gave me her family recipe. I mean it was a huge amount so I halved it and wound up with multiple quart jars of sauce that I then put in the freezer. Took me hours to make! It's really good, but I still like Prego! lol

What do you do with white
Patty Pan aka flying saucer
squash?

A neighbor gave us six
squash, but I've never
eaten them, so I don't
know how they are
supposed to taste.

Any recommendations
would be welcome.

 You can cook them just like yellow squash.

Just got through canning 12 jars
of yellow squash bread & butter
pickles. I'll do regular cucumber
B&B pickles as soon as DH brings
me some produce.

I haven't cooked more than an egg in weeks. My knees won't let me. Mom and the kids have been having to do it all.

Dad makes breakfast on the weekends.

I would love some simple chicken noodle soup, but I don't have the egg noodles. May have to settle for some Raman.

Chicken & couscous soup from
a friend, with grilled cheese
sandwiches. I've got the best
friends, who show up with
unexpected treats, especially
when I'm having a hard day.

Just got through putting up 30
pounds of fresh tomatoes. I quarter
them, and remove as many seeds
as possible, then chunk them up,
and seal them in quart baggies in the
freezer, to use Nov - March. Some of
them I added spaghetti seasonings -
they'll taste fabulous next year.

I'm still waiting for my cucumbers and zucchini to produce fruit. I got one zucchini. Out of 20 plants, that's not a lot. I look and all the flowers look like males. Figures. I've only been able to produce males.
