What's For Dinner?

This thread is on the other board and I really like it.  I like hearing recipes and new ideas.  Since I'm trying to move over here I thought I'd start this thread here.

I bought a new stock pot.  I'm making a huge batch of chili and cornbread.  I will freeze some of it for later.  I would like to get started on my turkey pot pies if I have time.

I'm using the big crockpot today too!
I cut cube steaks into strips, placed them on the bottom, then layered onion, green pepper, baby carrots, and cubed red potatoes, in that order. I poured 3 cups of beef broth over all.
About an hour before serving, I will make a stew thickening and add it.
Fresh garlic bread and a salad to go with the stew. Yummy!

Mmmmm both of your dinners sound yummy!

I'm making burgers, mashed potatoes from scratch, and salad for tonight. It's been awhile since I've had my from scratch mashed potatoes and since I have potatoes on hand ... I'm thinking I'll make a double batch and use the rest for a meal later in the week.

Czech: What do you use for a stew thickening?

Chef - do you make shepherd's pie? It's DD's fave way to eat veggies - smothered in mashed potatoes.

The dining hall didn't have anything I liked so I ran to Subway. The Subway's here don't have provolone cheese and the cheese I got instead tasted like wax. I will know better next time.


I have the best recipe for pork stew in the crock pot. If I can find it, I will post it.

I took some chicken breasts, sautéed them with pepper, garlic and paprika. Then simmered in some chicken broth, Once they were soft I cut them up, added BBQ sauce and simmered more until they fell apart. Also had scalloped potatoes and broccoli.

My chili came out so good! And there is plenty enough leftover to freeze. I'm happy about that. I can probably get two more meals out of it. I'm hopping tomorrow to get my pot pies done.

I think I'll make peanut butter chicken over rice. I replicated the recipe from an Asian restaurant we went to in Wisconsin. Don't know if I can remember it, but I'll try.

I don't actually written recipes very often.

 Yep, I do. Not often but when I'm in the mood for it, it sure hits the spot. It's one of my favorite comfort foods.

Tonight's menu is tacos. DH is a whiz at breaking up the taco meat perfectly so he will be the chef on duty tonight.

Ceviche; is a seafood dish popular in the coastal regions of the Americas, especially Central and South America. The dish is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with ají or chili peppers

The way I make it is kind of a pico de gallo with cooked fish in it but you can do so many variations.

 Yes!  My friend went to Alaska and caught the Halibut and brought it back and made this.  And I about inhaled the whole bowl, it was so good.  So, now, he and his wife prepared all the stuff for me and gave me the recipe to teach me to make it.  It's all chopped and pre-measured and everything.  I just have to throw it together.  I just added the lime juice and zest of lime and put it in the fridge to marinate.

My friend did it with cooked tilapia, it was very good. I think I will use shrimp.

The interesting thing about the dining hall, is that we frequently have things that don't "match" for dinner. One side of the buffet is "American" and the other side is Asian food for the many Asian students we have at the school. So tonight's menu was:

Chicken Kiev
Wild rice
Green beans
Chili
Beef and broccoli
White rice
Mac n cheese

Every lunch/dinner there is pizza, salad bar, lunch meat, canned fruit (pears one night, peaches another, etc), apples, bananas, bread, bagels, peanut butter.

There is always something to eat. And if it's something we don't eat all of at lunch...you can bet your last nickel we will have it for dinner that night!

Leftovers. DD is having the rest of the ham and potato soup. I had the rest of the Swedish meatballs. DH isn't hungry yet.
