I just put away about 1.5 gallons of homemade chicken stock from the crock pot (I had 2 chicken carcasses to use up). That won't be ready to do anything with until tomorrow when I skim off the fat from being refrigerated. Still don't know what kind of soup to make from it. I already have enough plain stock in the freezers.
Get the dry beans from the store. Soak over night.
Drain and rinse them.
In a crock put the beans, some kind of meat like a hog jowl or bacon.
Cover with equal amounts of water and the stock, salt and pepper.
Let simmer all day.
Potato soup.
Cut the potatoes into inch chunks, place in pot with chopped celery, onion, and a little garlic powder.
Equal parts water and stock to cover. Boil till potatoes are done.
Add a little cream, salt, pepper, and some butter. Heat till hot and enjoy.
Chicken sausage soup.
Brown and drain a pound of chicken sausage.
In a pot add one can rotel, which ever heat you want.
Can diced tomatoes with juice.
1 pack ranch mix.
1 can black beans.
1 can whole kernel corn.
1 pound of frozen cut okra.
The chicken sausage.
equal water and broth to cover.
Simmer till everything is hot.

While that is cooking down a bit shred up a chicken breast.
Toss in the pot.
Cover with stock and bring to a boil.
Add the amount of egg noodles you would like and season again if needed.
Simmer till noodles are done.
In the south we top it with cheese cause cheese is yummy on everything.

That chicken sausage soup was a last minute creation that turned out amazing. I am going to make it for out Christmas soup and sandwich family thing.
I think it will be a big hit.

Chicken Sausage soup does sound really good. For my picky taste buds, I would change the seasoning from ranch to Italian and use kidney beans. I have Asiago Chicken Sausages. Maybe add a green to it.
I married an Italian. We add cheese to almost everything. Just depends on what kind of cheese.
In a large soup pot, caramelize and onion in a bit of butter or olive oil. Add kale or other leafy green. (Collard greens or spinach are also good, or arugula) Grate about a tablespoon or two of fresh ginger into it.
Add chicken stock, and some rice. (I love using the purple rice from the natural food coop, but any slow-cooking rice works.) I don't use much, about a 1/2 cup for a whole pot.
Add two or three finely chopped sweet potatoes.
Add the chicken. (Duh)
Let the whole thing simmer, and add lots of ginger and garlic until it is perfect. This soup is a beautiful mix of colors, especially with the purple rice--A combination of orange, purple and bright green. I love it. It is also surprisingly soothing to a sore tummy. It is my go-to soup for the flu and other nasty illnesses. I add a TON of garlic and ginger, so it is spicy. I don't understand how that works, but it does! The potatoes and rice give it plenty of body, so it is very filling.

Tonight, we had chicken & dumplings. I made the dumplings using half of my pierogi dough recipe. Very easy.
2 cups flour, 1/2 tsp salt, 1 egg, about 1/2 cup lukewarm water. Mix it all together by hand to form a soft dough. Using a machine makes it tough. Roll it out and use a pizza cutter to cut into squares. (this is the half recipe except I did not halve the egg)
Tomorrow or Monday, I will make the Chicken Sausage soup. I may add gnocchi to it.

I use canned biscuits, too, for my chicken 'n dumplings. Just easier for me.
I make sausage soup, but I use beans. The boys love it. I season it with Italian seasoning, and use the usual aromatics (carrots, celery, onion, bay leaves).
That is NOT what my dumplins look like. Peas and carrots? No no no. Not in dumplins.

This is actually a pretty easy recipe for dumplings.
Here is a shot before I put it away for the night.
Mine looks more like this too. I always put a bag a mixed frozen veggies in it. I love it that way. But my dumplings are bigger and fluffier. I make them with bisquick and everyone likes them big so that's how I make them.

if you have any chicken broth left, you might want to try this beautiful soup - it can be served hot or cold:
10 oz frozen peas broth or 1/2 & 1/2 Madeira wine
Rinse the frozen peas in a colander to separate them. Put in a pot of simmering broth or 1/2 & 1/2; season well with salt and pepper; simmer just until heated through - 2-3 minutes. Puree in a blender in batches. Add a splash of Madeira wine to each serving; garnish with a small sprig of fresh curly parsley.
Those are green beans, not peas. Dumplings were a little smaller than I would have liked but yummy. I had to throw in some veggies since we had no salad mix. Needed to get the veggies in somehow.

Lily, it goes way beyond not liking them. I'd rather starve, than eat something that tastes gritty, like dirt. (Yup, those would be beans, and peas.)
