Question for bakers - are these things okay to freeze?

OK bakers, there's just not enough time the two days before Christmas to bake it all. So I want to bake a bunch of it today and tomorrow.

But I want it to be fresh and taste good.

So, are the following okay to freeze for a few days? I've never tried freezing these particular items:

chocolate chip cookies

peanut butter cookies

Chewies - (bar cookies containing graham cracker crumbs, coconut, chocolate chips, walnuts, condensed milk)

quiche

coffee cake

blueberry muffins

It should all freeze nicely.

Except the quiche. Not so sure it would be good after it thaws. Eggs might crack and dry.

Quiche will freeze too. I do it all the time. Make two and freeze one.

Yep. All will freeze nicely if done properly. Make it as airtight as you can. I would wrap with plastic wrap, then put into freezer bags.

But for two days, I would not freeze. If i had a lot leftover, then I would freeze. I would use good airtight containers now. I only freeze stuff once so if I thawed it out and did not eat it, I would throw it out.

Thanks for all the input.

I'll definitely freeze the cookies since it's 5 days away. One of my reasons for freezing is so I won't eat them!

Then DH will hide them in his vehicle while they defrost.
