What's wrong with steak sauce? I like steak sauce. For some reason, all kinds of concoctions can be slathered on every other food but steak is exempt somehow?
Because a good steak doesn't need sauce. We're not talking about French fries. We're talking STEAK.
That's the key, though. It has to be a good steak. I don't find many of those in restaurants. Occasionally, but not often.
I agree. They are few and far between, but I would never order a steak somewhere like that anyway.
G makes amazing steaks. We barter for them. Tonight, our hairdresser is coming over to do our hair in return for one of his steaks. We get all kinds of mileage from that...
But you don't always know until it's too late.

I know plenty about cooking a good steak and to me that means no bloody river on my plate. If you like it gross like that more power to you. Blood on my plate makes me gag so a good steak should not bleed. I wouldn't presume to tell you how to eat your disgustingly bloody steak...lol

A pool of blood on the plate is gross. And, you seem to want juices to run clear for other meats. Yeah, I know less risk with rare beef, blah, blah. But I LIKE it the WAY I LIKE IT.

I got so spoiled when we lived in So. Cal...back in the mid/late 80's I worked for a construction co (job cost accountant) and the business location was in their home/shop on a dozen acres out in agricultural zoned areas. They were from Montana, and kept about 3-4 steers pastured for slaughter every year. Grass fed with a bit of grain finish the last couple of weeks, and they'd sell me a hind quarter for just the cut/wrap charge from the butcher (at that time, 30 cents a lb) Never before or since had better (the butcher would age the beef before cutting).
The only thing, all the meat was paper overwrapped, and stamped with the name of the dearly departed...
There are a few places around here where I can get a good steak. Morton's, Ruth's Chris, Capitol Grille, Smith & Wollensky. I make a good steak, too. Sear both sides for 3-5 minutes each in oven safe skillet with olive oil, seasonings. Stick in 350 oven with a pat of butter on each. Cook time depends on thickness. If we use those 2 inch thick steaks from Costco, it will be medium to medium rare within 12-15 minutes.
We like ours juicy, so we eat them as soon as possible. If I'm serving a hemophobiac, theirs will go in sooner and removed sooner to enable time to "rest" while ours cooks so it can be served at the same time.

No matter how rare you cook a steak, if you don't "rest" it before cutting it, you'll end up with a "bloody" plate. Take the steak off the grill about one minute before it's cooked to your preference, plate and loosely tent with foil for about 10 minutes.
I learned the art of testing the doneness of steak with a light touch on the meat. Learned from a champion grill master!
That's pink enough for me. I don't want it red, raw, bleeding like it's on it's period.
That doesn't look too bad. I don't think you'll gat that at most places if you order medium, though.
Well, that's the problem. If you go to a new restaurant, you arent' sure how adapt they are to hit the right point. I usually order medium rare it comes out like that. But, if it comes out to raw, I send it back and if they want to spit on it or whatever, I figure it will enhance the flavor.

If a restaurant does "throw it back on" and doesn't just give you a new steak...run. Run like hell and get out of there. It's against food safety regulations to put an item that has been touched by a consumer back on the grill and then serve it again. It's not sanitary. Your fork/knife has bacteria on it and by putting that steak back on the grill, they are contaminating the cooking surface.
I know the grill will cook off the bacteria. I didn't make the rules. But if they are willing to break the rules you CAN see...you probably don't want to know what else is going on back in the kitchen.

I was in a very good steak house in Richmond & ordered rare & actually got rare. I had to send it back for a bit more cooking. MM I have no idea if they reheated it or sent me another steak. I would guess reheated because it would be terribly expensive to throw away every steak that is sent back.

I'm in RI and steak is on just about every menu here as well. It's hard to find a restaurant that does offer steak, except the fast food joints and even some of them carry steak on the menu.

Really? That's interesting. Most restaurants in the cities I have lived in dont have steak on the menu, or they will have 1 item. It just doesn't get ordered because people don't order it due to the health reasons associated with red meat. Not that I agree or disagree. It just is hard to find outside a steak house.

Well, there's that.
I'm from Nebraska, so I'm spoiled. I can go to my freezer and pull out a 3 year old sirloin and it will be better than most ribeyes or T-bones you can get most places.
It was even better when we used to hand feed our beef. All they did all day was eat corn and burp. MMMMM!!!!
Now, we still home raise them, but not the way we used to.

I've seen steak on the menu at every regular restaurant I've been to, pretty much. You can even get it at IHOP and Denny's. Maybe not a great steak, but it's available.

That's the most important consideration for me. I prefer rare to medium-rare, but if given the option, I'd pick a blue-rare steak over a well-done steak, any day of the week, and twice on Sundays.
A-1 should be reserved for hamburgers. As the commercial says, "it's not chopped ham, it's chopped steak".

Waitresses tend to look at me sideways when I say not to put mayo or anything on my burger - just bring me A-1. It makes a burger so much better.

I can explain it to you, but I can't understand it for you.
I have eaten at Taco bell and Ihop. And, I have had the Taco Bell Steak taco or burrito and it tastes good. Sorry, I dont' get all the "food snobbery" nowadays like someone is too good to wolf down a burger at a fast food place or something. Yeah, I can eat at fast food or I can eat upscale. Either way, I can probably find something to eat.
