I like my steak rare. I can tell what temp a steak is cooked to usually by sight and always by touch. Personally, I think anything past medium is a waste of perfectly good beef.

If I order steak when I go out (and it's rare because restaurants in my area seem to know two temps - raw and well done), I order it 'mooing' so I'm assured of getting something yummy. I hate when my in laws make steak. FIL is nutjob when it comes to food safety and cooks every bit of flavor out of meat. His steaks may as well be nailed to the bottom of a shoe.

I probably would, too--but it's better to leave it more rare than doing that.

Especially if cooking it at home. You can always re-fire it if it's home cooking and it's undercooked for a particular person's preference. (I agree with it not being re-fired at a restaurant, though, for the safety reasons previously stated)

I choke it down. Not worth listening to his lecture on food safety. Once, he had sour cream since he also made baked potatoes. I slathered sour cream on the shoe leather on my plate. Unconventional for sure but at least it disguised the "steak" it covered. You should see what he does to poultry ...

The only meat he does well is ham.

 I don't think tossing it back on a grill after I cut into it somehow contaminates the meat.  But, I am sure all of have ingested more bugs and fecal material then you are even aware of soooo you probably won't die having your steak seared a bit more on the flame.

I still laugh when I remember then FDIL coming for dinner, and we were grilling steaks. I asked her how she'd like it done and she looked surprised.
"You mean, I can ask for it like I do in a restaurant?"

Evidently, her folks cooked steaks to one doneness, ie "overdone" My DS grimaced recalling his first steak dinner at their home.

I like my steak medium. There is a place I gave up on ordering the steak because medium somehow translated to half medium rare and half well done. I have yet to figure out how the hell one can manage that. Such a shame too because they used to have fantastic steaks.
