WOOT WOOT! My black eyed pea soup is FREAKING AWESOME! It's simmering. Sorry FWM! I also have potato dumplings cooking. Topped with cream and cheese. What couldn't be better.

We're currently washing the bedding in Dreft to see if maybe the dog has allergies to perfume or dyes. What we do for this dog...

It turned out way better than I thought. Had to use up those stupid black eyed peas one way or another.

NJN, Job market is heating up in the US but for you DH, right now overseas is the ticket for the pay.

I am so organized now, ( see the purge thread)

DD and I fell asleep again to a Harry Potter movie. She has a terrible cold, she woke up and went to bed about 8:30. I am up now and hungry. I didn't make dinner.

 Oh man, because DH is not working we're trying really hard not to waste food.  We actually waste a lot.  There will a serving here a serving there...  It ends up getting thrown away.  So I googled by ingredient and made soup out of all the leftovers.  Black eyed peas, a few bratwurst, diced tomatoes, and chicken broth.  Plus a few other ingredients I added.  I always keep onions and garlic on hand so that's never an issue.  I was surprised because it called for molasses and Worcestershire sauce and a tiny bit of cumin.  It was surprisingly tasty.  Had a sweet kick to it.

I didn't make chicken and dumplings.  I made potato dumplings.  You mix two cups of leftover mashed potatoes with one cup of flour and two eggs.  Salt and pepper.  Put that in a baggie and cut the end off so you have a pastry bag type thing.  Boil water and turn it down to a gentle boil.  Squeeze one inch sections of potatoes into the water and wait for them to float to the top.  When they float to the top use a slotted spoon to put them in casserole dish.

In a saucepan melt three tablespoons of butter and saute an onion.  When done add one cup of chicken broth and a cup of cream.  Bring to a boil.  Melt half a cup of Swiss cheese and half a cup of Parmesan cheese in this and pour over dumplings.  Sprinkle a little of the cheese on the top.  Bake at 350 for 45 minutes until brown and bubbly. 

That's how you make potato dumplings.  Basically you use leftovers.  I guess you could use milk but it wouldn't be as rich.  I'm also making Elvis pie which is similar to what ed posted but my recipe called for marshmellow fluff and bacon.

IKWTDS, yes, the field for DH is out of this country right now.  We will do what we have to do.  Sucks but it is what it is.

Just got back from dinner. Had prime rib and shrimp and ate most of it. I think almost everyone took home a doggy bag, but I ate all the prime rib and most of the shrimp. I was starving. I didn't eat today knowing I would be eating out tonight.

NJN, I hope the Dreft works for your dog. Much cheaper than allergy treatments.

Thanks NAOW! I am really trying to not be wasteful. It's so easy to take things for granted.

tlc, We're praying the Dreft works. We've probably already spent two grand trying to figure out the problem and with DH out of work we can't afford to keep paying for guesses. I emailed Texas A&M yesterday to see if they had any ideas. But if the Dreft works it would be fantastic.

Nah. I hate hate hate frying anything. Just a personal thing of mine. I don't think I do a good job. My mom never fried anything. I never grew up watching it. I guess I never learned how to do it correctly.

Can you make pancakes? It's that simple.

Use a good skillet, put just touch of oil so it doesn't stick, and what you did with the mashed potatoes is what you use for this. Just a spoon full, in the hot skillet, let it cook till it gets the crusty edge and then flip. Cook a few more minutes and it is done.

Frying doesn't have to mean tons of grease and a deep fryer.

This really is that easy.

I may have to try that sometime. DH loves hashbrowns but the ones we buy from the store we can never seem to get right. They always stick and burn or get all mushy. I think maybe we do too many at once sometimes.

There are things I keep around the house all the time besides spices. Potatoes, onions, garlic, gluten free noodles, chicken broth, diced tomatoes, and sometimes a few cans of Cream of Mushroom soup. There was just a sale on canned goods at the store near us so we went and stocked up. I'm getting really creative. With my bread maker I can make all kinds of yummy bread and home made soups and stews.

I keep that stuff too.

I keep different cream of this or that for cooking. I have found that the beefy mushroom soup is a whole lot better for making brown gravies, on roasts in the crock pot and it will make cube steak melt in your mouth.

I also keep rotel, dry salad dressing mixes, marinades, and different forms of tomato sauce, paste and types of tomatoes. And rice. Different rices. Cause that can be put in about anything to make it go further, fill you up and thicken.

When I find freezer steam veggies on sale I get those. They are so easy for stir fry and soups. They are partially cooked so it doesn't take them long to get done.

I like stocking up on cake mixes too. when I find them on sale I get several.

That reminds me!

I tried that angel food cake and sprite recipe. My God that was good. And stupid easy.

You should try it.
