Just got home from getting groceries. It's 45 degrees again today and sunny, tomorrow it's supposed to snow. Also got my nails done and got gas since I don't know how much snow and how long it will be until I will feel like going again.
I decided I will email everyone tomorrow to postpone the program another week. Hopefully nothing else will happen to postpone it again.

GREDIENTS
2 tablespoons EVOO Extra Virgin Olive Oil
1/4 pound pancetta or guanciale or bacon, chopped
1 onion, chopped
3 to 4 cloves garlic, chopped
1 bay leaf
1 small fresh chili, seeded and chopped
2 tablespoons fresh thyme, chopped
2 tablespoons tomato paste
1 tablespoon flour
1/2 cup vodka
1 cup stock
1 28- to 32-ounce can plum tomatoes
A few leaves of basil, torn
1/3 cup heavy cream
1 pound penne rigate
Grated Parmigiano-Reggiano cheese
PREPARATION
Heat EVOO in a Dutch oven or deep skillet. Add pancetta, guanciale or bacon, and crisp at edges, 2-3 minutes. Add onions, garlic, bay, chili and thyme; cook to tender. Add tomato paste, stir 1 minute then add flour and stir a minute more. Add vodka then stock, tomatoes and basil. Break up tomatoes and simmer. Add cream and cook 30 minutes at a gentle bubble.
Cook pasta to al dente in salted boiling water; reserve 1/2 cup starchy liquid. Drain pasta, toss with sauce and starchy water. Remove from heat, toss with a handful of cheese and serve.

Talked to my dad this evening. I didn't go up to the hospital today because I needed to run errands today and just rest. My mom started physical, occupational and speech therapy today due to her stroke. Today they had a meeting with the therapists, doctor and social worker before she started. My dad and BIL went to the meeting. They just talked about what she would be doing and how long they thought it was going to take. Apparently, she was playing a Facebook game and refused to quit the game when they came in for the meeting. Dad said the people from the hospital got snippy with her about it, and she really didn't want to go to therapy. BIL said she just sat there finally once they got her off the computer, and acted like she wasn't really listening. This is either her being really passive/aggressive, or she now just has a one-track mind and can't multi-task. I think she's being passive/aggressive because she doesn't really want to do it. Stopping a game because someone wants to talk to you doesn't require multi-tasking. It requires you to shut the computer, and listen.
I have a feeling she is going to be a real b!tch about this. They said they thought it would be about 10 -14 days of therapy before she goes home. She thought this was a long time. We all think it's not long enough. My dad is really stressed out about getting the house accessible for her. He's a building contractor, but it will take him a few weeks to remodel the bathroom by himself.
ETA: I went grocery shopping today and bought a bottle of wine. I think it will be gone in the next hour. I don't normally drink much, but I really wanted to today after the week I've had.
