We are getting our new boss Monday. She's from Colorado. We are planning a southern food pot luck for her. I was thinking dirty rice but that's not really southern. I don't do red rice so I'm stumped. Ideas? Chicken and dumplings is already taken.
I figure a dozen won't be there. Maybe another dozen won't even come back for food. Some may not eat pork. I could probably get away with my bigger crock and get those Hawaiian rolls. Mmmmm!
Put a bag of dry beans, I get the mixed bean soup beans. Look them over. Rinse them, cover with water let sit in the fridge all day.
That night, drain the beans, rinse, put them in the crock pot.
Add a piece of meat, I use hog jowl or ham portion.
Cover with chicken broth and add water if needed to completely cover.
Season with black pepper and a bit of salt.
Turn on high for about an hour, then on low a leave it till morning.
If you want them to have a kick add some red pepper flakes.
Serve with diced onions, cornbread, chow chow and anything else you would like.

Chow chow is a relish. It is usually sweet and tangy. Sometimes spicy. I don't care for it but some swear by it.
It can be made with peppers, onions, pickles, fruit. Different things.
Had an aunt who made peach chow chow. It was the only one I ever liked.

Sweet potato pie is a good suggestion too, they are all good suggestions. I will wait until Friday and see what everyone else is making so I can bring something different. Usually 15 or so people bring stuff. We always have more than enough for everyone.
Individual Meat Loafs - use your regular meatloaf recipe, but put it in muffin tins (be sure to put a rimmed baking sheet under the muffin tins when you bake it to catch the drippings!). Portion control, and a little goes a long way. Don't overfill the cups.
