We are going camping this weekend and our two grand boys are coming, they are 22 months and 7 months! Looking so forward to it!

 Oh wow I didn't know you ever lived in the states.  Considering the things you know how to cook I doubt cornbread would be too difficult unless they don't sell cornmeal in CA.  I bet one of the southerners here has a good recipe.


 I married an American and lived there for about five and a half years.

Yeah, I'm a pretty good cook, and should look into making it myself. I need a good recipe.

This place is awash in wood-burning-oven bagels, croissants and baguettes, but no cornbread. Not the sweetish, yellow kind. I love that stuff.

Lily - care to share your recipe?


 Well mine isn't sweet. I don't like sweet cornbread.

But my recipe is simple.

Put a little oil in a cast iron skillet, put it in the oven on about 400-425. 

In a large bowl, add 1 cup self rising flour, 2-3 cups cornmeal, 1 egg and then add milk or water until you get a thick batter. 

Take your hot skillet out, run the hot oil around the pan to coat. Then pour the oil into your batter. Mix in and pour back into hot skillet.

Bake until done.

 we have been taking them since they were tiny, we have a 38' fifth wheel and take pack n play and booster seat, we often dry camp at the lake and they love the boat and swimming.  this weekend we are going to a town 90 miles away to the festival in the park and farmers market and Saturday on to another bigger town 100 45 miles away for DD to look for wedding dress (DD is not their mom, she's their aunt)  DH and I will ride our Harleys over and DD and her fiancé will take the boys in their car. 

We camp every weekend from mid to late may until September or October.  Die hards I guess LOL

Use to love having a camper.

We just had a small pop up but we could go at the drop of a hat.

There are so many camp grounds, within an hour you could a lifetime away it seemed.

Gotta brag on my DH! !

Been having problems with my artificial knee for a couple of days - back to using the cane, even in the house.

This morning, he got us bacon/egg/cheese tacos.
For lunch, he served Bagel Bites (my fave) and a salad
For dinner, he made the most delicious chicken & dumplings - from scratch!

 I've never had chicken and dumplings. I live in a different country and it's just not a thing here. Maybe in the rest of Canada, I don't know, but certainly not in French Quebec.

There are certain things you just won't find much of in Quebec. Chicken and dumplings. Cornbread. Mexican food. Chicken and waffles. Peach pie!!
