Good morning Geeks! Have to get ready to head out for basketball practice. DH and I have the youth Y league. Pretty basic basketball for a lot of kids who have never played but always fun to introduce them to the game. Got some nice pork chops that I am going to make with a mushroom white wine sauce later. Pierogies and stuffing and some sides. DD wants to bake some cupcakes. And, then I need to get some cleaning done and get ready for the week! Monday, ack!
It snowed here! We have snow on the ground and roof!

Good Sunday Morning! It is a nice, chilly fall day here. DH is still snoozing away. It's almost noon here. But we did not go to sleep until around 5:00.

Now I want cheddar bay biscuits.

The leaves are changing and look very fall like. Our yard is getting filled with leaves. Only problem is that we do not have any trees, these are all from the neighbors.

Yesterday was spent shopping and running errands. We got out Halloween costumes and eventually went out for a nice seafood dinner.

Today is yardwork for DH and schoolwork for me. And laundry too.

Pierogies....mmmmm
Thanks guys. I am doing ok. Much more sore today but meds take the edge off. I went to the movies last night with a buddy then local bar but no smoking.....not gonna get dry socket!
The procedure wasnt too bad until the last tooth ....was a bit stubborn, and sounded scary...otherwise he waz super quick. I chose a local so I could drive home.
Next step....another crown and eventually an implant. Yay. Dang gum disease!
SyFy has been kind of boring but silent hill wasn't too bad.

Oh, and I will need to pull homemade pierogis from the freezer this week. This is not the only place where it has been talked about the last few days. We make potato/cheese by the hundreds. We share with those who help us make them. Then we freeze them into dinner portions.

Working half a day today, just about time to go home. I forget where LGS is, that she got snow! Aughhhh! We've had chilly nights but it's been nice during the day. Air has been too dry for any precipitation. That's supposed to change mid-week, hopefully it will just be rain, temps are supposed to be good.

 I had the twilight anesthesia. Had four impacted wisdom teeth and a molar removed.

The molar was the killer. I did get a dry socket. 

Worst pain in my life. No kidding.

Hello all. I am surprisingly good after having walked so much yesterday. Iced down my legs. Between that and a pain pill I was okay. I just don't want to quit on life yet! I brought home three pie pumpkins and two big pumpkins to carve. DS got a mini pumpkin. No idea what for but he had to have it and it was only a dollar. DN got a pumpkin and Sparkly got a pumpkin. All the pumpkins are here. IF SS can behave in school we're going to carve them next weekend.

Caitlyn picked up pumpkins Friday. She has 1 massive pumpkin and two small pumpkins.

She said she is doing Cinderella's carriage.

We will see.

Jesse and Aaron doesn't want one. As of now anyway.

arrived home a little while ago. The house was 53! and there was some ice on my deck. BRRRRRRR. Had to turn the heat on. At least the heat challenge lasted until past mid October!

I had a blast in DC. I used to travel there a lot, at least once a month but haven't been in about 5 years. I am so impressed with how the city is so clean these days and it has so much nightlife now. In the past the carpet was rolled up by 9 every night. Not anymore. Had some wonderful meals and fun walking around.

 Thanks.  Walking is so painful!  Luckily I have a family that understands.  But I always seem a yard behind them!  SS is doing chores now.  Hopefully we can carve pumpkins next weekend.  My kids never outgrow wanting to do them.

 Yep!  The ground there was pretty uneven.  Hard to walk sometimes.  The boys ran through the corn maze and hay maze several times.  We bought them arm bands for ten dollars which enabled them to do any activity for free.  Otherwise, each activity was five dollars.  It was way cheaper to just buy the armband.  They rode the train a couple times too.  It was free to get in.  We bought frozen lemonade and paid for the armbands and the pumpkins.  I think with everything we paid for we spent about $50.  But we brought home four huge pumpkins, three pie ones, and a mini one.

I feel bad for DS. My head was too foggy to attend Church this morning so we didn't go. DS grabbed his clothes to get dressed and threw a tantrum after being told we can't go because I don't feel well. I'm surprised he knows that it's Church day. Smart kid! I'm glad he likes it enough to get upset over not going. I was sad we couldn't go too.

Yikes Lily that sounds awful. Luckily mine weren't impacted but the fillings fell out And it was causing pain....and with my gum disease out they came. I am a big dental chicken so im surprised with myself for not wanting to be put out.....but I only got palpitations once lol.

I got dry socket in both holes after having my bottom wisdom teeth out when I was 20ish. That pain is definitely in the top 5 for 'worst pain ever' experiences.

I had three wisdom teeth on the top but didn't get dry socket when those were removed back in 2011, thankfully. I think what helped is that the dentist packed the holes with a pad thingy that dissolved and stitched them shut.

 Just once? You did better than me.

My oral surgeon insisted I be put under twilight. 

He said it would be very traumatic if I knew what was going on.

It was a very light sedation. 

I woke up about half way through it. It was such a light sedation that I woke up when it infiltrated on my left hand and they were trying to reestablish the IV on my right.

That's all I remember until it was over.

Here you go.  GGM came over from Poland, somewhere in the southeast corner area.  We always make the filling ahead of time so it is cold or room temp.  We don't make large batches of dough at a time or else it gets tough.  I know some people who put sour cream or oil in their dough.  We don't.  We also only reroll the dough once and cook the scraps from that batch.   We probably make about 6-8 batches of that dough recipe to use all the potato mix.  Each batch gets about 3 dozen medium sized pierogis.  We usually double the potato mix to make 10 lbs of potatoes.

JLBear71's Great-Grandmom’s Pierogies

Potato Filling

5 lbs Potatoes -
2-3 containers (8 oz) Farmers Cheese (either soft or shredded)
2-3 bricks (8 oz) Cream Cheese
Salt and Pepper to taste (I leave out the salt and add about a tablespoon of white pepper to 5 lbs of potatoes)

1. Make potato filling the night before
2. Mash the potatoes with the cheese but do not use butter or milk.

Dough

3½-4 Cups Flour - All Purpose 
1 Egg
1 teaspoon Salt
1 Cup Water – Lukewarm

1. Make a well with the flour and add remaining ingredients. 
2. Mix well by hand until a very soft dough forms. Mixers can make the dough tough.

Note: You may need to adjust the flour and/or water to get the right consistency. Humidity, temperature and sea level can vary your results.

To make the pierogies

1. Roll dough out on flat surface and cut into shapes

2. Place about 2 tablespoons of filling and seal the edges using a little water
3. Cover with a light towel before cooking to keep from drying out the dough

 

To cook the pierogies

1. Boil pierogies until they float for a few minutes to cook the dough and reheat the filling
2. Sauté in butter and onions until lightly golden 

 

 

To reheat Pierogies

1. Saute in butter and onions until reheated

These freeze well in smaller batches (just enough for one meal)

I could be very wrong, but I think Farmer's cheese is just a cow's milk cheese that isn't aged very long. It's very mild, and looks like a white cheddar, but it's not. Kind of tastes like a swiss cheese.

 Farmers Cheese is a mild, semi-soft cheese, almost like a queso fresco.  You still have to shred it but it is almost as soft as mozzarella.  You could use shredded provolone instead.  Mozzarella would be too stringy to use.  Or a firm, well-drained cottage cheese.  You can use havarti or a mild cheddar too.

 I put in about 5 hours today.  So glad I went to church first, it really relaxes and centers me.  About 10 minutes in, I could literally feel my shoulders relax and the tension drip out of my body.  I fight my personal demons of not feeling wanted.  When I can push past those, I am always pleasantly surprised how many people are happy to see me. 

 

Watching Sunday Night Football right now.  The Colts are holding their own!

Busy day.

Took DD to watch her BF play hockey an hour away.

She dragged me to PF Changs.

I got my hair cut.

We bought a dress for DD for Christmas dinner at school - it was on sale for $30!

Stopped at the grocery store and bought snacks to get DD through the week.

Did 2 loads of laundry.

Cleaned the kitchen.

Now I am headed to bed because I am exhausted!

 I put in about 5 hours today.  So glad I went to church first, it really relaxes and centers me.  About 10 minutes in, I could literally feel my shoulders relax and the tension drip out of my body.  I fight my personal demons of not feeling wanted.  When I can push past those, I am always pleasantly surprised how many people are happy to see me. 

 

Watching Sunday Night Football right now.  The Colts are holding their own!


 Glad you made it to church and had some time to relax. I hope you get a break soon.
