Christmas Eve/Day Menu Ideas

So... what are my peeps having??  I'm trying to figure out mine because I do Christmas Eve at my house and this year I'm trying to figure out how to work it all in with my grandbaby that's going to come on Monday.  I'm looking at 14 people total.  All family.

The only thing I have so far is a 11 lb Spiral Ham.  What does this menu sound like to you?  This will not be sit down and eat all together as a family.  We don't have that option.  We're going to be all over the place!

Shrimp (Cold as in ****tail)

Cheesy Scalloped Potatoes and maybe another 9 x13 dish of Au Gratin?

Chef John's French Onion Green Bean Casserole

Spinach Tortellini Pasta Salad

Pepperoni Rolls

Rolls

Veggie Tray

Chips/Dip/Snacks...

 

Does that sound ok?  Ugh.  Help.  I am going to ask my brother to bring something... because I need help!  lol.  I am going to be so busy this coming week... it's got me scared.

I don't know what mom is doing. She said she would take care of it.

I know Christmas eve will be simple.

And the kids and I will be making our Rice Krispy treats.

Christmas Eve at our house is actually Christmas. We pretty much open all of our presents to and from each other on Christmas Eve. I prefer that because it's dark and with everything lit, it's beautiful. We are all old enough that there's no issue with Santa Claus. lol! When my kids were small, Christmas day was the bomb. But now that we're all adults... Christmas eve has become our family Christmas.

We have cheese and crackers and olives and pickles to snack on.

For dinner.
Turkey
Dressing
Green bean casserole
Homemade bread
Mashed potatoes and gravy
Sweet potatoes

Dessert.
Pecan pie
Pumpkin pie
Peppermint cheesecake

DH chose the menu.

Sounds good.  aww  I do have a turkey in my freezer, but I need to make that when I'm not under so much pressure.  lol.  I took the week off after Christmas and I will make that then.  But!  I will add garlic and jalapeno stuffed olives to my spread on Xmas Eve.  Thank you!

Thank you!  It's even more special because my oldest son is flying home on the 23rd.  I haven't seen him in 2 years!  I am off work Dec 24 through Jan 4th I believe.  I haven't had that much time off in years.  It's well needed and I am going to love every minute of it!  So much to be grateful for and happy about.  My daughter doesn't know her brother is coming home.  So that will be a big surprise on Christmas Eve.  I hope she doesn't drop that baby when she sees him.  biggrin

You can bake brie with just about anything, really.....raspberries or caramelized onions or sundried tomatoes.
I'm partial to cranberries. It's always a big hit.

We wrap our brie in a cresent dough crust and bake. Sooooooooo good. I've done the cranberries and nuts thing too. The women at church loved it. But now you said onions and tomatoes and I need to make that.

 ZOMG! When Itty bitty was born (by C-section), I was the first person to hold her (after Mommy & Daddy). Mommy was sneezing & had to blow her nose. Mommy was on a cart.

I scooped her up (she was less than 6 pounds) and looked into her eyes. Love @ first sight.

And it only gets better!!~!!

I understand that being a grandparent is better than being a parent. msrock, congratulations and enjoy! What a special Christmas this will be! Be understanding of the new mamma, she will be hormonal and not herself. Have patience and understanding. What a wonderful gift!

Congrats Ms Rock!

For the Brie, buy a sheet of flaky pasty dough, let it thaw, and wrap the brie in the dough putting the topping on first of course. I slice off the white stuff off the brie first. Brush the top of the dough with a wisked egg before baking.

Congrats Ms Rock!!

That brie with caramelized onions sounds devine!

Cream cheese with pepper jelly over it is yummy. Serve with some crackers.

Pineapple cream cheese spread is yummy too. It's just two blocks of cream cheese and a can of crushed pineapple blended together. So good!

G's mom's cookies
Chocolate chip - cheesecake - Reese's cookie bars (a recipe G found)
Tea

If I'm feeling ambitious, I'll make deviled eggs but it will probably be deviled egg salad because I suck at peeling eggs.

I'm still deciding. Christmas starts at breakfast. So I'm thinking of making lightened up creme brulee french toast casserole which I can put together the night before, and serve with fresh fruit, coffee, mimosas and maybe a side of scrambled eggs. My mother does Christmas Eve and she is going to bring over her leftover dip/chips/cheese roll for everyone to snack on throughout the day. Then I'll have an early dinner...so far I think I'll make string bean salad, and either Poulet Au Vinaigre over steamed rice, or chicken rollatini with zucchini & mozzarella and parmesan risotto.

I put my eggs in a heavy sauce pan, add enough water to cover them and then some. Bring to a boil with lid. Take off heat and let sit 15 minutes. Take lid off and run under cold water.

I've tried many different ways of cooking them and always manage to butcher the whites. It's really not a big deal. If I ever have to make them look professional, I will either decide to care or will pay the premium for the premade ones.

A little salt helps.

And I keep a little cold water handy.

If one isn't wanting to peel, I dunk it and that seems to help.

Oh. And if you turn your eggs over a few hours before you boil them, the yolks will be more in the center.
