I've needed one for awhile now. You know, when you first start cooking you think, "I don't need all that stuff!" Then as your cooking skills grow you find you really do need some of those things. I also got the slotted herb scissors FNW talked about but DH had to order them. My kitchen is growing by leaps and bounds.

Oh, and I need the whisk thing too. I've done so many recipes lately that ask for you to whip eggs lightly before adding to the recipe. It's the perfect size for that.

I have the bamix immersion blender. It has a "whisk" blade which is much easier to store.

OK, i am making bread now. I was reading up on breadmaking and it said to add your water to the flour and give it an half hour to "autolyse". So, that is what i am doing, then i will add the yeast and so forth. So, let's see if i get superior results.

FWM and I went nuts at the cooking store today. I added to my cooking collection. I got an apple corer. I bought DH two potato peelers and me one. We like different kinds. He likes the old fashioned kind and broke our last one. So I bought two. Our other one is pretty old and dull so I got a nice one for me. I bought two new loaf pans which I needed, a little cutting board, and cake spatula. I got a magnetic utensil hanger too. I could probably buy everything in that store!

I met a friend for lunch today and we exchanged Christmas gifts. She got me a big chef's cleaver. I'm a happy camper. I've wanted one for a long time.

I used to look at all that cooking stuff and say, "Wow, what a waste of money. You don't need all that stuff!" Now that I've been cooking for awhile I think, "Holy cow, I NEED that stuff. And not a cheap one!"

I know I'll use the cleaver a lot.
I have terrible osteoarthritis in my hands, and cutting up a whole chicken or a turkey carcass for soup is sheer agony.
The cleaver is going to make it easy.

I have a meat cleaver. I used to use it all the time. I should get it out again. It's great for smashing garlic to loosen the skins, or to mince by slamming the side of it down on garlic or ginger.

I have just never used one.  I just either roast a whole chicken or I buy the parts i need.  If i make soup, i boil the whole thing in the pot and break it down after i cook the broth.

Sometimes, I don't want a whole roast chicken. Sometimes I want to cut it up and cook it on the stovetop in a coconut milk sauce, or curries or butter chicken.

I buy a lot of whole chickens now.  When buying organic, it's much more economical.

I buy organic chicken.

In the pieces that I want. Or, whole. Either way.smile

I don't trust myself with a meat cleaver.

Nope. Not going there.wink

I just tried out my ceramic skillet.

I made some scrambled eggs with cheese.

They cooked up very nicely. No sticking.

And the pan was very easy to clean.smile

So far, so good. I'll be interested to see how it holds up over time.

Riding, I keep thinking I'm done buying kitchen stuff.

Nope, I always manage to find something that I want to try.

Plus, stuff wears out after a while, and needs to be replaced.

So, I guess I will never be done buying things for my kitchen.biggrin

NJN, your immersion blender came with a mini food processor?! Too cool. I need a mini food processor, a ceramic skillet, Dutch oven, and a gas range.

I got a hydroponic herb garden for Christmas. Super awesome, I just have figure out where I can set it up and not have the cats eat all the basil and thyme.

Yep! I told DH I wanted an immersion blender for my bday and he said "What is that." When I showed him what it was we looked at them. They have them from cheap to extremely expensive. I told him I didn't need a really fancy one but he bought me a nice one anyway. I will definitely use it. I want a Dutch oven too.

There are items on my dream list which will never make it into my kitchen. My kitchen may be larger than some (15 x 15) it is also an eat-in kitchen. There is only so much room to store stuff.

Most items I bring in need to be multi-taskers. I have very little room for items that only do one job, no matter how good of a job they do. They also have to fall within my budget since we have everything we need. Wants are discretionary.

I have never used a meat cleaver. With all the cutting of meats that I have done, I have never needed one.

Now a filleting knife? Yup, that is handy.
