I would wrap bacon around ****tail sausages fasten with a tooth pick. Place it on a cooking sheet, spread brown sugar over them and bake in the oven 375. for 45 mins. Place in crockpot and pour the juice over it and keep warm. It is so good. Cheese ball with crackers. A Cheese tray.

****tail weenies are not my fave. Blech.

Do you want something people can grab with their hands (asparagus spears wrapped in prosciutto) or something they can put on a plate (various dips - crab dip, spinach dip etc). Which are you going for or doesn't it matter?

I always like a nice cheese plate. Well, more of a charcuterie plate actually. Salami, pepperoni, various olives, cheeses, sundried tomatoes, crackers...

Guacamole and corn chips
Those tiny sweet and spicy peppers filled with goat cheese.
A cheese platter
A veggie platter
Fruit, fresh fruit. And maybe strawberry yogurt to dip it in.

Finger sandwiches. You can use either pimento cheese or one of those flavored cream cheeses. Or you can do ham and swiss or turkey and a different cheese. Cut them into triangles or four long rectangles.

Cream cheese filled tortia wraps always go over good too. And simple to make.
Spinach dip in a bread bowl is good too.

Check pinterest. It has a lot of neat ideas. Oh for my daughters wedding we had a tray of fresh strawberries and a dip made with just cream cheese and brown sugar. It was yummy.

Those are all great.

But I need something a little nicer.

Not talking champagne and caviar but not ****tail wienies either.

Any cooking has to be done before I get there.

I will have ways to keep things warm but not cook.

Prochuto wrapped breads ticks
Stuffed cherry tomatoes
Mini beef kabobs
Mini quiche
Bacon wrapped crab bites
Some crusty bread with topenade

I was thinking a cheese and cracker

Some fruit

Does that sound ok?

It seems like something is missing.

I was thinking about some pinwheel sandwiches

But I really need more options before I settle on a set "menu".

The chocolate fountain wouldn't be good for apps, maybe for desert. Shrimp ****tail is good. If you have access to a Sam's or Costco you can buy cooked and peeled and deveined, crackers with a offering of different cheeses, and fruit, grapes near the cheese.

The shrimp ideas sound great, but it scares me too.

I'm afraid someone will get sick.

And then there is the whole smell of shrimp that I never really want to experience again.

I'm rethinking the bacon wrapped crab bites too.

CAESAR SALAD IN ENDIVE

 
Caesar Salad in Endive

Dressing

1 small garlic clove

Salt and pepper

1/4 mayonnaise

2 tablespoons lemon juice

1/2 teaspoon finely grated lemon zest

2 tablespoons extra-virgin olive oil

Mash the garlic with a pinch of salt. Whisk in mayonnaise, lemon juice, lemon zest and olive oil. Season with salt and pepper.

Salad

6 California endives

1/4 cup parmesan cheese

Croutons 

Separate endive heads into single leaves. Sprinkle parmesan cheese and croutons in each leaf and drizzle with dressing.

One of the local schools has a culinary program.

I'm going to see if they cater.

I think they do.

And I believe they serve.

Serving is a nice touch. And might make it go further, if you know what I mean. Also, you can serve warm appetizers easier rather than having something sit there, getting cold.

BLT Pinwheel Wraps
 
1 block of cream cheese
1/2 cup of mayo
1/2 cup of diced green onions (just the stalk, not the bulb)
10 slices of bacon
4 roma tomatoes
2 cups of lettuce cut in strips
5 large flour tortillas
 
1) Mix the cream cheese, mayo and diced green onions.
2) Warm up the tortillas for at least a minute in the microwave so that they are very warm and pliable while preparing and rolling.
3) Spread the tortillas with the cream mix.
4) Starting on one edge of the tortilla, place a strip of tomatoes, bacon and lettuce but leave at least two inches empty of toppings.
5) Slowly roll the tortilla from tomatoes, to bacon to lettuce. The last two inches of the wrap will help 'seal' the sandwich closed
6) Refrigerate for at least 2 hours.
7) Take out of the fridge and slice into pinwheels and place on a serving platter to serve.

I would almost expect a meal at this time so I would add some apps that are more filling. Sorry if some of these are a repeat

A vegetable tray would be nice
I would definitely do a cheese and cracker tray. Probably with meats like pepperoni, ham and maybe one more protein.
Bruschetta with italian bread
Antipasta platter with Olives, pickles etc
Pasta Salad
baked "fried" ravioli
quiche
egg rolls with untraditional filling like cheeseburger or sloppy joes or pot pie
sausage cheese balls
spinach bites
stuffed mini bell peppers

Do you have access to several slow cookers? If so,
Asian Sesame meatballs
Swedish meatballs
bbq kielbasa bites
garlic & herb mushrooms
buffalo chicken meatballs
crab dip
warm seasoned nuts
spinach artichoke dip

Wait - you are having it over the dinner hours but not serving a meal? I would consider having it either earlier or later in the day. I think if you have an event over the traditional meal hours, people expect a meal. I know I would. I don't think there is anything wrong with doing just appetizers, but I would hold the event during the hours of the day when people would not expect a meal in that case.
