Mom is talking about a country theme.

Mini, melted cheese burritos. Just taco sized tortillas with some grated cheese in them, rolled up "burrito" style. Steam them real quick or microwave them a little bit (you may have to experiment to get the time right, I was drunk last time I made them and don't remember how long I cooked them) just before serving. Makes for about two or three bites each.

Deviled eggs are always a good option.

I also like the idea of finger sandwiches, preferably egg salad.

Mini pulled pork sandwiches, mini bbq beef sandwiches (the kind with slaw), deviled eggs, a veggie platter with ranch dressing, a tray of summer sausage and cheeses, popcorn chicken, grilled corn on the cob, (you can cut each ear into pieces so they fit on the little plates) crusty bread and butter, a fruit platter.

I tried to pin her down this morning.

Me: "Mom, I need to get a direction on which way to go with this"

Mom: "I haven't really thought about it."

Me: "Do you want classic elegance or country easy or typical wedding reception or prom like or do you have an idea of your own?"

Mom: "Your dad doesn't want froo-froo, I don't want country or prom but I don't want cookie cutter either."

Me: "What does that mean?"

Mom: "I'm sure what ever you come up with will be fine."

Lily, you can still give your mom her country theme with decor, but stick with the nice apps. Just have them served on wooded trays with some plastic hay. That would be cute.

Hey, I never said I didn't have the occasional drinky-poo.

I made the mini cheesy burritos one drunk night in my younger years, way back in the stone age. Soft taco shells and shredded cheese were the only things I had in the fridge!
