I like to base my weekly meal plans around what is on sale at the store that week. For example, last week chicken breasts and avocados were on sale.
Here is what I made:
Feta spinach sun dried tomato stuffed chicken breast
Chicken avocado quesadilla + grilled corn
Avocado chicken salad
Chicken enchiladas + cilantro lime rice
Spaghetti and meatballs
I keep homemade marinara in the freezer and I made a triple batch of meatballs the last time I cooked them, so I had some frozen.
With the leftovers this was more than enough to feed three adults and a child for a week.
I also had some plain salads for lunch and homemade frozen egg muffins for breakfast each day.
For this menu I had frozen pork chops and chicken thighs and all really had to buy was a bunch of broccoli.

And, i am freaking sick of chicken cuz that seems to be the easiest thing to make, lol. I need recipes that appeal to my family. I keep it pretty simple. An entree and a side and we are good to go!

If you like fish, a simple and good way to prepare any white fish is brushing a bit of olive oil on the top, sprinkle with pepper and salt and fresh garlic, back for 12 minutes at 350. Have a veggie such a asparagus as a side and some wild rice.

Here is a menu for ease. Put it in any order to change things up. I'm a fan of the crock-pot during the week b/c I work all day.
Chicken tacos or burritos - put chicken breasts in crockpot with chicken broth and a jar of salsa. Let cook all day, and shred the chicken. It will look "watery", but once you shred the chicken and stir, that won't be the case. Then you need rice, refried beans, cheese, lettuce, and your other favorite taco fixings.
Creamed chicken. Put 3 or 4 chicken breasts in the crockpot, a couple spoon fulls of minced garlic, 1 can of chicken broth, 2 boxes cream of chicken soup (I use Pacific organic so it's not gross), salt, pepper to taste. Let cook on low 9 hours or high 4 hours. Shred the chicken and stir. Serve over mashed potatoes or rice and a side salad or vegetable.
Spaghetti and garlic bread. It's meatless night - I do fiery spaghetti - recipe is in the Let's eat thread. Sometimes I serve with a salad.
You've had 3 meals, it's now leftover night. Take it easy.
Steak and baked potatoes with green beans. This can be cooked in 10-15 minutes.
Marinated salmon, I like to use a ginger teriyaki sauce to marinate the salmon. Serve with cheesy potatoes or rice pilaf, your choice, and roasted asparagus. Just drizzle the asparagus with olive oil, sprinkle with Parmesan cheese and put in oven at 350 for about 15 minutes.
Roasted chicken with potatoes and baby carrots. Get your roasting pan and put the potatoes and carrots around the edge, salt and pepper, added chicken, rub with butter, season it the way you like, I use salt, pepper, paprika, and poultry seasoning, and put butter and garlic in the cavity. Then I use a box of Pacific cream of chicken soup dolloped over the potatoes, carrots and spread over the chicken.
It's unlikely any of those last three will be leftover, but if you have meat left on the roasted chicken carcass, make some chicken noodle soup.

If you are sick of chicken, you have to think of it as a blank canvas. Chicken can change with whatever you cook it with. We eat a lot of chicken, but it tastes different in every recipe.

I just need to print out some menus instead of winging it. I think that will be a bit easier. I do this periodically, then i go back to winging it lol. I really don't even need a 7 day menu. There are a lot of nights when we are all going in different directions so everyone eats cereal or leftovers or whatever.

Figure out what your staples are, and go from there. In my house it is eggs, burrito wrappers, white bread, whole grain bread, rice, pasta, and berf. Usually stew meat, hamburger or cube steaks. I have the option to get the beef in bulk and store it frozen--that makes a tremendous difference.
Anyways, breakfast is always primarily eggs, lunch is always a solid meal with a starch, veggie and protien, and dinner is sandwiches and a treat for my BF (he works nights) and something light and veggie based for me. A typical week looks like this:
Scrambled eggs and toast
Goulash with peppers and onions, garlic bread on side.
Two ham sandwiches, two cookies a couple of apples and a rice cake for bf, fried rice and veggies for me.
Fried egg sandwiches with ham and cheese.
Taco salad!!!
Whatever leftover salad there is, plus a ham sandwich and treats for bf, nachos with guacamole and black beans for me.
Breakfast burritos, with scrambled eggs with cottage cheese, black beans and leftover nacho meat and cheddar cheese.
Home made mac and cheese with cut up cube steaks, onions, peppers and peas.
Leftovers for bf, pasta salad with ranch, veggies and corn chips for me.
Scrambled eggs and toast.
Spicy rice with hamburger and veggies.
Sandwiches and treats for bf, yogurt, cereal and fresh fruit for me! (I do that every once in a while, it is such a treat. Oranges, strawberries, frozen raspberries, bananas, and mix the whole thing into maple yogurt and Lucky Charms. SO GOOD.)
Breakfast burritos again, this time with the base of stew meat, corn, peopers and onions, and tomato in the crock pot all night. Add scrambled eggs and cheese.
Fried rice and sweet sour and spicy beef with veggies (this is vaguely like Chinese food. )
More burritos for both of us, minus the eggs. (Technically cheating, and this involves virtually no prep work.)
Egg sandwiches with ham and cheese.
Pasta salad with beef, cheese, balsamic dressing and veggies.
Ham sandwiches and treats for bf, grilled cheese with tomato for me.
Scrambled eggs and toast.
Nachos with hamburger fried with taco seasoning, black beans, peppers and onions; salsa, cheese and plenty of guacamole and sour cream on the side.
Ham sandwiches and treats for bf, leftovers from any other day that week for me!
When I was growing up, I had ONE dog...Guess what it was?

My menu planning is not fancy. I sit down with my grocery list and get on Pinterest. Find recipes that look good, add ingredients to grocery list. Add a couple other favorite recipes to the rotation and call it good.
DH used to do most of the cooking back when we both worked. Now that I stay home I do most of it.

DH cooks breakfast on the weekends and a few meals during the week. I do more of the dinner cooking because right now, I am only working two days a week and when I do work, I usually get home an hour before he does. DH is working 5 days a week. We both share in the clean up afterwards.
DH does more than his fair share of the housework. He vacuums and sweeps up every week, I will mop as needed. DH deep cleans the bathroom every two weeks, I give it a quick clean in between. DH does almost all of the dusting, I do the organizing. DH does his own laundry, I do mine and the household. DH runs the carpet cleaner twice a year or more if needed. He takes care of most of the yard work and shovelling. I take care of the finances and most of the shopping. I make the beds since I don't like how DH does it. DH takes care of our parakeet and cleaning up after.
When DH was not working, he took on more of the daily tasks.
This is what works for us.

The truth is we all prefer my cooking over Husband's. No one in his family cooks, except his dad who only uses a smoker or deep fryer. So he never learned to cook.

He's learned to make a few things, but his add makes it almost impossible for him to pull a whole meal together without having something go wrong.

My DH doesn't cook. He has, can, and will if I ask him. Just don't expect him to fix a balanced meal. A burger and a potato is fine for him. One time when I was really sick he wanted to feed the kids frozen pizza, wings, mac and cheese, and french fries. I almost cried.
Mostly he helps me cut and chop. I despise cutting and chopping onions, garlic, and scallions. And yes I have a chopper. He will chop anything I ask anyway I ask. He fetches ingredients too. AND, he will make a run to the store if I've discovered I've run out of something. He's a gem. He drags out pans, put pans away, and does all the dirty jobs like mixing the ground beef with stuff. He also grills but the boys fight over that job now. I made strawberry jam today and he and my SS prepared all the strawberries. He also fills the jars and puts them in the canner. When I roast the chickens he will debone them for me and then make the broth himself. I just holler what to put in it and how long to boil it. So yes, he does a lot.
He loves to help me. We're going to make the dogs some biscuits this week. We're out. DN made some out of banana's, oatmeal, and peanut butter and said her pup loved them. I've been meaning to do that for awhile. He'll mix, I roll and lay out on the sheets, he cooks. It's kind of a coordinated effort in our house.
I do most of the laundry but if I ask him he'll do a load or two without even complaining. He'll just say "What do you want in it?" My only complaint about my DH is that he doesn't "see" when things need to be done. Otherwise he is perfect. And he really encourages me to try new things and won't complain if I do. He always helps out. He's a good guy.

Tang, I am trying to expand my menus. Sometimes they seem to be the same thing all the time. Not that my family doesn't like that stuff but I like a variety. I've purchased Basamic rice and Jasmine rice and we like them. I'm thinking of getting some Barley to throw in some stuff too.
I laughed the other day because my Mum in Spain asked me if we eat out like that all the time. I've been posting pictures of the food I make. I told her no. I make every bit of it. She was shocked. She was floored that we had a garden and had already managed to have a small salad out of it.

I added a Korean bbq chicken dish, a tumeric dusted pork dish, and a roasted veggie plate to our list of dinners.
Of course, I still have jelly and jam to make along with the dog biscuits and broth.
