I'm by myself so I wasn't going to do anything special (in terms of an Easter meal) but then I saw bone-in ham for .77/lb so I figured I better buy a ham. I love to make soup from the ham bone!
So I made ham glazed with mustard, brown sugar and pineapple.
I also found a recipe for a corn meal pudding casserole, that looked interesting. I used to always make scalloped corn, but I have a bunch of corn meal that I need to use, so I gave it a try. It turned out pretty good, wetter than a corn bread, but still kind of bready. If that makes sense.
Also made our traditional "Green Stuff" (Lime jello, pineapple, whipping cream and cottage cheese).
I was going to get some asparagus, but I had broccoli in the fridge to use, so made steamed broccoli instead.
I also bought the makings for stuffed mushrooms, but never got around to it! I guess I'll have some apps one night soon.
Strawberries were on sale too, so strawberry shortcake is also on the menu. I'll bring some down to my mom when I go visit this afternoon.
