MEXICAN MIGAS - Breakfast 3T oil 3 large onions, chopped 12 eggs ¾ C milk ¾ C salsa 3C stale tortilla chips, crushed 1½C minced cilantro 6 med. tomatoes, diced 1½C shredded Colby Jack 6 garlics, minced 3# sausage, cooked & crumbled s/p Heat oil, add onion. As onion cooks, beat eggs, milk & salsa in large bowl, then mix in tortilla chips. Stir in cilantro, tomatoes, sausage & cheese. When onion is translucent, add garlic cook 1 min more, then pour eggs over top & cook on med-low until eggs are set & liquid is mostly evaporated.
