Well it's June. That means baking. Lots of baking. #1 wants "minion" cupcakes to share with his class. 27 banana chocolate chip cupcakes decorated with yellow frosting and little minion eye(s) on them. This Friday. #2 wants chocolate. 25 chocolate cupcakes decorated in a variety of ways. Some blue frosting, some green. Ninja turtles & spiderman. Then the first day of camp is their actual birthday, so it's 24 more cupcakes. I stocked up on flour & sugar today.
Ohfour, when does G come home? I have/had a hard time when DH was away, too. The worst was when he was on golf trips to Scotland. The distance got to me.
Morning everyone. I think I am going to have to breakdown & replace my A/C. It has been limping along for a few years now but it doesn't seem to be able to handle it this year. I couldn't get the temp below 72 even with the ceiling fan & tower fan going full speed. Of course I could hang meat in the basement even with the vents shut.
Hope everyone's A/C problems are fixed soon. The compressor on the van has died, so I have A/C issues as well.

Ingredients1-1/2 cups (375 mL) all purpose flour1 cup (250 mL) granulated sugar1-1/2 tsp (7 mL) baking powder1/4 tsp (1 mL) salt1/2 cup (125 mL) butter, softened1 cup (250 mL) milk2 eggs1 tsp (5 mL) vanilla
Preparation
In large bowl, whisk together flour, sugar, baking powder and salt. Using electric mixer on low speed, mix in butter, milk, eggs and vanilla; beat on high speed until smooth, about 2 minutes.
Spoon into 12 paper-lined or greased muffin cups, filling about three-quarters full. Bake in centre of 375°F (190°C) oven until cake tester inserted in centre comes out clean, about 18 minutes. Transfer to rack; let cool completely. (Make-ahead: Store in airtight container for up to 1 day or freeze for up to 2 weeks.)

Variation
Chocolate Cupcakes: Reduce flour to 1 cup (250 mL) and baking powder to 1/2 tsp (2 mL). Add 1/2 cup (125 mL) cocoa powder and 1 tsp (5 mL) baking soda to dry ingredients. Sift before adding butter and wet ingredients.
When you take the cupcakes out, and while still hot, put a spoon of the peach juice over each one and let it soak up and cool.
You won't need frosting.

I can't believe tomorrow is June. This year has gone way too fast.
DS is watching Bee Movie. Again. I think this is the 3rd time this week. That's ok. I like the movie too. I can't believe he's going to be 3 at the end of the year. I don't like this growing up business.
The weather forecasters said rain for the next 4-5 days. OK I can deal with rain.
But not a deluge!!!!!
The truckers slowed down to 40 mph in a 70 zone - so you know it was coming down hard.
There was so much water on the road I didn't want to take a chance, so I turned around
after only going 30 miles - it took a full hour to go 30 miles!!!
The one bright thing was that my next door neighbor (renter) met me at my carport with a huge
umbrella to walk me to my front door. Yea for good neighbors!!
