And by that, I mean pastry!  (what else were you thinking???)

I also made pancakes tonight ... ate 2 with peanut butter (okay, 3) and then 1 with a poached egg (to round things out).  Kind of a late dinner, but it was really good!  Good practice for tomorrow (today?) when my friend comes over to bake cookies & muffins & cupcakes!  And maybe some banana bread . . .

 As a single parent, my "meals" were pretty pathetic. I'll be the first to admit that.

I would often make Rice Krispie treats & once substituted granola for Rice Krispies. My kids loved it & wanted to know where I got the recipe, since obviously I could not have come up with that idea myself. hmm

Tonight will be cupcake baking night. I hope the bananas are ripe enough.k Now #1 says he would like blue frosting on the cupcakes, with the yellow. Something about the minion pants they wear. This is what I get for letting him watch Cake Wars.

Did you know that avocado can be used as a substitute for butter/oil in baking? So excited to figure out how to use the one on my shelf before it's rotten. Avocado-banana bread, here I come!

That is good!  I hate having to give my cats medicine.  They are terrible patients & I don't have anyone to help.

My friend signed up for Blue Apron & said he really liked it.  There is also another one I can't remember.  They ship all the ingredients you need.  I thought about trying it but their menu wasn't very appealing to me.

 Yep. I get Hello Fresh. The box comes every week with (almost) everything you need. You need to have salt/pepper, oil, butter, stuff like that on hand.  I've really liked it. I've tried some new things I didn't think I would like and ended up really liking.

Well, thanks to our NUMBER ONE movie, I was informed today that I will be getting a bonus! And so will G since he's still technically on the payroll (doesn't THAT suck). So I'm not so anxious about getting the kids a perfect swingset for their bdays....
