Is it too much to ask for a simple set of good quality cotton sheets?

No, no it's not! Not at all. Personally, I like the sheets by Hotel Collection. They're always 100% cotton of varying thread counts and usually a decent selection of colors. They can be pricey but shop online for a good sale if you can't find one locally.
I had a set of bamboo sheets and they pilled terribly. I gave them away. I usually don't do less than 500 thread count but the last set I just bought by Hotel Collection were just 400 and they're just as nice as any of the higher thread count ones I've had. They were on sale at a local department store here for $39.99 (queen set).
I bought some fancy Egyptian Cotton sheets, like 800 thread count or more. It was my Christmas/birthday present to myself.
Those thing were super soft and I loved them until they started coming apart.
Threw them away after only 2 months.
I just need 2, good, 400-500 thread count, white, queen set.

I've bought the last 2 sets at Sam's Club and I've been sooo happy with them. One was just a regular set and one is Egyptian cotton, both are excellent though.
I bought my set on sale from landsend. They are soft, but the wrinkles drive me crazy. I have been known to iron them. 🙊
Hahaha when I have to dry mine in the dryer, it's like they came out of a dog's butt that's how wrinkled they get if I don't get them out immediately. It used to drive me crazy but not so much any more. They're under the comforter so only I see them.
I inherited 6 sets (twin) of Wamsutta Supercale sheets -
they lasted forever, and were the smoothest thing to put
against sunburned skin. My Mother would hang them on
the clothesline to dry until they were just slightly damp,
and then she would iron them. We had an old-fashioned
mangle, an electric ironing machine that produced the
absolute smoothest sheets and tablecloths you can imagine.
I could even iron DH's shirts with it! If you ever go to a
yard/estate sale that has Supercale sheets - snap them
up! They will last and last and last.
I bought a set at Tuesday morning that were fabulous. After 12 years, they finally wore through. DH got us a set from Bole & Branch. They are very soft. I got some towels from them as well. We also have their flannel sheets and are heavenly.
