I zapped some bacon for the boys and whipped up some scrambled eggs for DH to cook for them. They must be going through a growth spurt, they want a big breakfast lately.

 When DS was that age, every day I started him with a pancake and then the regular breakfast. The pancake helped in filling him up.

My mom made big breakfasts every weekday morning during the school year. Probably during summers, too, I just cannot recall currently. She felt we did better in school if we started out with a good, hot breakfast. Last week the boys had their SOL's and the teachers asked that we give them big breakfasts before they come to school. So we did, and now the boys want it every day.

They were never hungry before but I think they didn't like what DH gave them. So I'll start making pancake & waffle batter and have DH cook for them on mornings when I go in to the office. They don't like leftovers or frozen foods (even if it's MY pancakes that are re-heated). They want it freshly made (spoiled). I'll make them crepes or ebelskivers or even dutch pancakes on mornings when I'm home.

Bacon? Who's got the bacon! I want me some B.A.C.O.N! Dagnabit! Now I have to get some out of the freezer to make. Speaking of bacon, yesterday I found maple bacon flavored chips by Kettle brand at the store. I haven't tried them yet but I'm told they're good.

What a morning. Just before 7, a very loud thunderboomer cracked and rumbled. Didn't see any lightning but it just about shook me right out of bed. A quick downpour and then stopped. Nothing since. I'm hoping the sun breaks through the cloud cover.

I'm off today and tomorrow. Woohoo! Time for laundry, groceries, cleaning, etc.

Dadgum raccoon climbed the support pole to reach my deck last night. Besides managing to reach the bird feeder that was hanging from a pole over the edge of the deck, he destroyed my flowers that were sitting along the railing. Death to raccoons!

My boss decided that Wednesday is a stupid word and I had to look up the origin. Apparently, our lazy tongues and dialects have dropped the "d" and the extra syllable, so now he thinks the spelling should be changed to reflect that.

First world problems.

We got about an inch of rain yesterday - it all came
down as I was making my 87-mile trip up to the Hill
Country. Man! Even the truckers had reduced their
speed by about 15 mph. Just hope we don't get a
downpour for the next 7-10 days, so the watermelons
can dry out (they want a very dry period as they
ripen at the end, to become sweet).

I can't keep microwave bacon in the house.

It's usually gone before the day is out.

When the kids were little, I made breakfast every morning. Eggs, sausage or bacon, toast or bagels. They would get rice, oatmeal, or grits, too.

Sometimes they got pan fried potatoes.

Fridays were treat days, I'd make cinnamon rolls or muffins or every once in a great while they might get a donut.

As they got older, the less they wanted for breakfast. 

Still made the Friday treats, but through the week they were happy with a boiled egg and toast or cereal.

 Wrap some barbed wire around the posts starting about a foot or two from the top.

Move the bird feeder.

When you freeze bacon in bulk, it can be a pain to
defrost a whole bunch. When you bring it home,
re-package it this way. Using parchment or wax
paper, fold it zig-zag over one or two slices. Put in
freezer zip-lock bags, and remove as much air as
possible. When you need just a couple of strips,
remove them and return the rest of the pack to the
freezer. The one or two strips will defrost in a
couple of minutes, rather than having to defrost
(and use) a whole package.

We'll get 3 packs from BJ's. I will freeze two, and keep one in the fridge. When I need another pack, I put it in the sink filled with hot water and let it defrost while I get the rest of the meal started.

I was thinking Momala was talking in bulk, like 5-10 pounds of bacon in one package.

You know, bacon is a cured meat.

You can get a slab, slice what you need and wrap unused portions in cheesecloth.

It'll keep in a cool dry environment for weeks.

 DD and I use half a pack. It's just the two of us though. Most packages aren't a whole pound anyways.

 I used to eat the whole pound of bacon in one sitting all by myself. Then, I realized just how unhealthy it was to do that so now I freeze it in packs of four strips each. It's much easier to pull out that way and cook.

My doctor's office called an hour ago. Instead of coming
in for my appointment tomorrow, could I/would I like to
come in today? Sure, why not. When I got there, the
receptionist just about hugged me to death. Seems they
have a patient that REALLY needs to be seen tomorrow,
so I saved them from having a really jammed up day.
They do everything they can to accommodate their
patients. One of the reasons I love them!

We get our bacon from the Amish so it is not in a pack but sold loose by the pound. I portion it into 6 strips for the freezer, 3 each. DH's cholesterol appreciates the portion control.

Momala, I have my own board and spent lots of time gathering them for it. They're all there or in my photobucket account. A good search for something will turn up just about anything on the internet. hahaha
