So I switched out Sonny's food to high protein , low carb food about a month ago. Grain free. He already looks great physically but is a pooping machine! Is there a balance of foods out there where he gets the benefit of the no grain food but doesn't make him poo so much?

I'm not familiar with that brand. When I was working at petsmart, Blue Buffalo was just coming out and many customers liked it. Nutro Ultra is also a good brand.
Honestly, I'm not sure why you are seeing an increased output. Usually, the higher quality of food, the less waste. Without the extra fillers, the dog can process and use more of the food resulting in less poop.
At the very least, maybe try a different protein, it could be Sonny can't process the one in his current food resulting in it not being used and absorbed.

I started him on Nutro when I got him, this new food is the switch over to his old age food.
