Chicken done on a wood-fired grill with a vinegar and butter dressing on it while cooking. Mmm so good. Corn on the cob with only the hair removed, a sprinkle of water, a slab of butter wrapped in foil and sat on the grill to steam. Second favorite would be a good hot dog loaded with raw onions.

Potato Salad. But not with a lot of junk; just potatoes, onions, finely cut cucumber, finely cut paprika, hard boiled eggs cut up and mashed, mayo and vinegar

Chilled roasted chicken, cucumber salad, and
potato salad mold. Texas Fruit Cake for
dessert.

Chicken: roasted, or use a rotisserie chicken
from the supermarket - they're usually really
good. Cut into serving portions before
wrapping.

Cucumber Salad:
1 jalapeno, seeded, minced 2 garlics, minced
3T fresh lime juice ¼t crushed red pepper
½t salt 3T oil 2 cukes, very finely sliced 2T
minced cilantro
Dice jalapeno & garlic; add to a medium bowl.
Add 3T fresh lime juice, red pepper, s/p. Whisk
to incorporate the 3T oil. Set aside. Finely slice
cukes (mandolin). Add cukes to dressing & stir
together. Finely mince the cilantro & add to bowl.
Stir to combine. Let sit in fridge to marinate for
a couple of hours.

MOLDED POTATO SALAD
3C diced cooked potatoes (1½#) ½C Italian salad
dressing ½C mayo 1T wet mustard ½t salt ¼t
pepper ½C finely minced celery ½C thinly sliced
radishes 2-3T chopped parsley 1T minced onion
1 env Knox ¼C cold water
While spuds are still warm, toss gently w/ dressing,
cool. Blend together mayo, mustard, s/p, stir into
spud mixture. Mix in celery, radishes, parsley, onion.
In small pan, sprinkle Knox over water to soften.
Put on very low heat & stir til gelatin is dissolved.
Stir into potato mix & turn into 6 small molds, that
have been sprayed with Pam, or lined with Saran.
Chill 2 hours til firm. When ready to serve, unmold
unto lettuce leaves. Note: I usually spread radishes
into a nice pattern on the bottom of the molds before
adding the potato mixture.

AUNT SARAH’S TEXAS FRUIT CAKE
2C sugar 2C flour 1t Baking soda 1C chopped nuts
22 oz can crushed pineapple with the liquid. Mix all,
pour into greased/floured 9x13 glass pan. Bake at
325 for 40-45 mins til nicely browned. Let stand 20
mins. Can be iced with: 3 oz cream cheese ½ stick
butter 1½C XXX sugar. Thin w/ a few drops milk if
necessary to get to spreading consistency. Cut into
squares.

All of these travel really well.
