Went to DH's huge family Christmas
party - and we really enjoyed it!
There's a lot to be said for being
the last of a generation - everyone
waited on us hand and foot!
There were coordinated gifts for all
the children - and they opened theirs
first, so they had something to play
with while the adults opened their
White Elephant gifts. I think the
most creative was how someone
gifted a casserole with a carrying
cover. The top items were two
cans of green beans, a large can
of mushroom soup, and a large
can of onion rings, each individually
wrapped. On the bottom of the bag
was the casserole, also individually
wrapped.
DH thoroughly enjoyed the chicken
& dumplings his niece brought - and
I agree - it was really good.

Here is my FOOLPROOF recipe for
a perfect prime rib
PERFECT PRIME RIB
Cook's Magazine 12/95
1 3-rib standing rib roast (1st cut)
tied, set at room temp for 3 hours.
Salt and freshly ground black pepper.
Adjust oven rack to low position and
heat oven to 200. Heat a large roasting
pan over 2 burners set at medium high.
Put meat in hot pan and cook on all sides
til nicely browned, and about 1/2 cup fat
has rendered, about 6-8 minutes. Remove
roast from pan. Set wire rack in pan, then
set roast on rack. Generously season with
salt and pepper. Put roast in oven and cook
until meat registers 130 (medium rare),
about 3 1/2 hours (or about 30 minutes
per pound). Let stand 20 minutes, loosely
covered with foil (a bit longer is fine) before
serving.
I usually add about1/2 - 3/4 cup of water
to the bottom of the roasting pan, to soak
up some of the drippings, to use in making
the gravy.
Basic Gravy
2 Tbsp fat (pan drippings, butter, whatever)
2 Tbsp flour 1C liquid (broth, water, wine)
Melt fat, stir in flour, cook on low heat 4-5
minutes to get rid of the raw flour taste.
Gradually stir in the liquid, and cook until
has come to a simmer and thickened.
If for some reason it is too thin, thicken it
with some instant mashed potato flakes
Tonight we are gathering here for our immediate family.
Kids are bringing their SOs.
Doing a white elephant, here, too.
But we set the limit at $1.
I've been sick since Saturday, so that's fun.

Merry Christmas 🎄 everyone! Getting ready for our Christmas Eve party tonight, part of me wanted to cancel because of being in the middle of redoing our house. Last night my husband had a Clark Grisswall moment when our kitchen sink pipe broke loose and flooded the corner of our basement floor and wall that was just painted. Got it fixed, but it was a pretty stressful night.
We did Christmas yesterday, so its already over for us. The kids had a BALL...they didn't want to go home. Its sweet, but it breaks my heart at the same time...DGS1 and I sat at the front door for over 30 minutes watching the white squirrels. He is in awe of them...

Oh, Lindley, I know exactly how you felt last night. Last Saturday morning we had water coming thru the kitchen ceiling...
It's all fixed and pretty again. Thankfully, the plumber came as soon as I called and he didn't charge me for the service call since it was his mistake. He even cleaned up the mess.
Glad you are still doing your party. The company won't care if everything isn't perfect. It's the people you are with that counts. Merry Christmas, Lindley.

Faith isn't something that keeps bad things from happening. Faith is what helps us get through bad things when they do happen.
Just got back from my friend's house. She is battling cancer and a few other issues. Simple dinner of freshly made ham salad, rolls and other nonsense stuff. Very relaxing and great to see my friend feeling good after a full week of chemo. She knows she will feel sick next week so this was a good last? night. Her husband is being so awesome. Happy for her.
