I'm hitting a wall and need new recipes.

Fresh vegetables, mains, sides, with or without meat, desserts, drinks, snacks, salads, salsas, sauces, dressings.

TEXAS CARNE GUISADA

3# sirloin 2T EVOO 4T flour 3/4C
water 1 garlic, mashed 1t ground
cumin 1/2t chili powder s/p 11 oz
can beef broth 4 flour tortillas,
warmed sour cream, cheese, & pico
de gallo for garnish

Cut beef into 3/4" cubes. In large
nonstick skillet or stock pot, saute
beef until brown, over medium heat,
in at least 2 batches. Add oil &flour,
& toss w/ beef until flour is brown.
Add water & spices, stirring well.
Add beef broth & reduce heat to med-low.
simmer approx. 30 min until beef is
tender. If sauce seems too thin, add a
bit more flour to desired consistency.
Place a warmed tortilla in a soup bowl
& spoon the carne guisada into the
"tortilla bowl". Garnish w/ sour cream,
cheese, & pico de gallo.

Pico de gallo is a mixture of finely
diced white onion, tomato, & green
bell pepper.

I went to a Pasta making class last Fri night with some friends. Had a great time! And we made extra to take home so i whipped up some fresh pasta the other night. First time i made it with semolina flour. I usually just use regular white flour but this is a blend of semolina and regular all purpose flour. Good stuff!

Sautéed in olive oil and chardonnay, garlic, oregano, pepper flakes, tomato, mushrooms, spinach, basil, penned pasta and parmigiano and it was so good

FRENCH ONION SOUP BAKED RICE
1 can Campbell's French onion soup
1 can beef broth
1 cup regular rice (not instant)
1 stick butter + extra for pan

325* oven. Grease an 8x8 baking
dish. Add soup, broth, and rice.
Stir to mix well. Cut butter into
small pats, and distribute evenly
over the top of the rice. Seal
with foil. Bake 30 minutes.
Remove foil & stir well. Return
to oven (uncovered) and bake
an additional 30 minutes.

You don't need to add any salt,
because the soup and broth
already have enough.

STRAWBERRY MARGARITA CAKE BITES

White cake mix 3 egg whites 2/3C water
1/3C oil ¾C Bacardi frozen Strawberry
Daiquiri mixer, thawed 1/3C tequila
(Patron Silver) 1C heavy whipping cream
2T XXX sugar 2T lime zest + more for
garnish French sea salt fresh strawberries
350*. Combine cake mix w/ egg whites,
oil, water, strawberry mix & tequila.
Beat 2-3 min on high until smooth. Pour
into greased & floured 9x13 pan. Bake 30
min until a pick comes out clean. Cool
COMPLETELY, then refrigerate. Cut into
12+ 2½” circles (biscuit cutter) Beat
cream, sugar & zest until stiff peaks.
Garnish w/ lime zest, salt, & slivered
strawberries.

I just made the worst taco beef ever. Kind of greasy and runny. I didn't let it reduce enough. Ugh.

I use extra lean ground beef, 93% or better, for tacos. No grease to drain.

I totally thought I did - I was surprised at how well it was cooking given that it wasn't 'in it's own juices'. Then added the water and seasoning and bam. Should have pulled out my cheesecloth.

 I'm looking for new, healthy, not difficult to prepare, and maybe even some meatless options.

I'm looking for a reminder to put the dressing on the salad before all the toppings. Now I have dressing covered toppings and plain lettuce. I don't want to add more dressing because it will be waaaay over the alloted recommendation.

And yes. I tossed it. Still a pile of plain chopped romaine.

 Yes, I bought one years ago but never got around to using it.  But, really if you want to make good french fries, it's the best.  Baking french fries just aren't the same.  So figured I have never really done fried chicken so time to learn.  And, I was really happy with how it turned out!  I deep fried it until the coating was brown.  Then I stuck a meat thermometer in one of the pieces and put it in the oven to finish and get the internal temp to 165.  The coating i used was a great crispy texture but way to spicy unfortunately!  I used Louisiana Seasoned Chicken Fry batter.  I wanted to get some good results before trying my own coating.  If they just cut the hot spice a bit it would be perfect.  I love spicy foods and while I enjoyed it, it was too spicy for DD.

That sounds delish, SB!

I'm making a lemon velvet cake. Just put three, 9 inch round cake pans in the oven.

It's a semi homemade cake.

2 boxes of your favorite lemon cake mix

The ingredients to make them called for on their boxes.

8 oz cream cheese, softened to room temperature 

8 oz sour cream, or plain Greek yogurt

It takes a really big bowl.

Cream together the cream cheese, Greek yogurt, and eggs. Add in the water and oil, then the dry mix. Mix on high until smooth.

Let batter rest while you prepare your pans, parchment on bottom. I sprayed the whole pan, then put the parchment on bottom.

Bake in a preheated 325 oven. The time will vary from what's on the box, I'll let you know how long it takes these to cook.

Frosting is 1 of your favorite lemon frosting tubs.

8 oz cream cheese, room temperature

Half pint whipping cream

Lemon zest is optional 

Put frosting in mixing bowl, mix until softened, add cream cheese, mix together until smooth, add zest if you like.

In a separate bowl, whip whiping cream until nice a fluffy, gently fold in to frosting mixture. 

Frost cake.

I'll add a picture when it's all done.

SUNDAY LUNCH!

Oven baked, boneless chicken thighs, BBQ sauce on the side.
Old fashioned, southern potato salad.
Baked beans.
Grandma's coleslaw.
Mac and cheese.

Looks good lily. I love lemon cake. One of the girls at work makes a lemon bundt and just puts a glaze over the top with lemon zest. So good!
