If you like lemonade, how about some
jalapeno lemonade?

Using gloves, seed & core 1 or 2 medium
jalapenos. Slice into julienne strips, and
add to a 2 quart bottle of Minute Maid or
other bottled lemonade. Let it sit for
about 1 hour.

Wonderful lemonade flavor, with just a
hint of kick !

Blue Margaritas (Frozen, or on the rocks)

1 1/2 oz tequila

1/2 oz Blue Curacao

1 tsp Triple Sec

1 oz Margarita mix

That is for one serving. When I make a batch to put in the freezer, I make 8 servings.

Which come to:

12 oz tequila

4 oz Blue Curacao

3 TBS Triple Sec

16 oz margarita mix

I make them 2 days in advance, in a plastic container, so they have enough time to freeze. Enjoy!wink

Shrimp Creole (from the skinnytaste.com website)

Ingredients:

  • 2 tsp olive oil
  • 1 medium onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup celery, chopped
  • 2 cloves of garlic, minced
  • 14-ounce can of diced tomatoes
  • 8 oz tomato sauce
  • 1/4 teaspoon of cayenne pepper
  • 1/4 tsp Cajun Seasoning such as Slap Your Mama (more or less to taste)
  • 1 bay leaf
  • 1 tbsp of all purpose flour (1 tsp corn starch for gluten-free)
  • 2 tbsp water
  • 1 lb of large shrimp, peeled and deveined
  • 2 tsp Worcestershire sauce
  • 2 tsp hot sauce, to taste
  • 1 medium scallion, sliced
  • 2 tbsp fresh parsley, chopped
  • salt to taste

Directions:

  1. In a large skillet heat the olive oil over medium heat.
  2. Add the chopped onion, green bell pepper, garlic and celery and saute until tender.
  3. Add tomatoes and tomato sauce, cayenne pepper, cajun spice, bay leaf and bring to a boil.
  4. Cover and reduce heat to low and simmer 20-30 minutes.
  5. Make a slurry of the flour and water and stir into the tomato mixture.
  6. Continue cooking for another 5 minutes.
  7. Lightly season the shrimp with the Cajun seasoning and add immediately to the tomato mixture.
  8. Add Worcestershire sauce and hot sauce; stir together.
  9. Cook for another 5 to 6 minutes, or until shrimp is opaque and cooked through, adjust salt if needed.
  10. Add chopped green onion and parsley and serve.

The only addition I make to her recipe, is a package of andouille sausage, cut into bite sized pieces. I put the sausage in after I add the tomatoes. My family likes the extra flavor.

If you don't like cheese grits, this also goes well over a bed of rice.smile

Baked Cheese Grits

Yield
Makes 6 servings

Ingredients

    • 4 cups water
    • 3 tablespoons butter
    • 3/4 teaspoon salt
    • 1 cup quick-cooking grits
    • 1 cup (packed) coarsely grated extra-sharp cheddar cheese
    • 1/2 cup (packed) coarsely grated Monterey Jack cheese
    • 1/2 cup whole milk
    • 2 large eggs

Preparation

    1. Preheat oven to 350°F. Butter 8x8x2-inch glass baking dish. Bring 4 cups water, butter, and salt to boil in heavy medium saucepan. Gradually whisk in grits. Reduce heat to medium; cook until mixture thickens slightly, stirring often, about 8 minutes. Remove from heat. Add both cheeses; stir until melted. Season with pepper and more salt, if desired. Whisk milk and eggs in small bowl. Gradually whisk mixture into grits.
    2. Pour cheese grits into prepared dish. Bake until grits feel firm to touch in center (grits will still be soft), about 1 hour. Let stand 10 minutes and serve.

The recipe was a bit different. I always try a different recipe, you know to find that Recipe Nirvana. For this one, you poured heavy cream over the rolls before baking. First time i have done that.

Sometimes I take my cinnamon rolls out 5 minutes early, put a little icing on them, then put them back in to finish cooking.

I put the rest of the icing on after they are done.

It's so good.

They look like whoopie pies!

I'm not an oreo fan, but good job.

We grilled burgers and dogs for dinner. Just had to have them. Couldn't wait another day for it.

Chicken Spaghetti for a CROWD

1 large chicken, cut in 8ths 1# spaghetti,
in 2” pieces 2½C shredded sharp Cheddar
1 finely diced green bell pepper 1 finely
diced red bell pepper 1t seasoned salt
1/8t cayenne 3 cans cream of mushroom
soup 1 large onion, finely diced s/p
chicken broth

350 oven. Bring a large pot of water (broth)
to a boil, enough to completely cover the
chicken. Add the chicken pieces & boil for a
few minutes, then turn heat to medium-low &
simmer, 30-45 min. Remove chicken & 2C
broth. When chicken is cool, remove skin &
pick out meat. Save skin & bones to make
broth later. Cook spaghetti in remaining
chicken broth until al dente. Don’t overcook.
Mix soups & reserved broth. When spaghetti is
cooked, combine w/ chicken, 1½C cheese,
peppers, salt, cayenne, soup & onions, &
sprinkle w/ s/p. Put mixture in large baking
pan & top w/ remaining cheese. Bake until
bubbly, about 45 min. If cheese on top starts
to get too dark, cover w/ foil. Serves 12+

Travels well. Freezes well.

If you use a rotisserie chicken from the
supermarket, you'll probably want to use
two of them, since they are usually small.

Washed and put potatoes in the oven.

An hour and 20 minutes later we had fluffy, pillowy, baked potatoes.

Topped them with shredded cheeses, butter, bacon bits, and sour cream.

There was chili and broccoli also.

Sometimes simple is the best option.

Not something I cooked but if you get the chance to try Gordon Ramsay's sticky toffee pudding, do it. It's amazing! I hate caramel and don't like toffee but I loved his sticky toffee pudding. I don't know what that commercially produced crap that passes for caramel is but it is nothing like the caramel that was on the sticky toffee pudding. I'm not a dessert person but that thing was fantastic and I will be having another on a future trip to Vegas.

His beef wellington is also amazing. Melts in your mouth. It's served medium rare because of how it's cooked so DH was hesitant because he likes medium to medium well but he loved it. I prefer rare but the medium rare was perfect for the welly. I loved how the puff pastry was flavorful on its own rather than just being bland.

DH got the Shepherd's Pie at GR Pub and Grill. He loved it. I got the butter chicken curry. It was so fragrant and delicious. We sampled each other's dishes as well. I loved our server at the Pub and Grill. It was so much fun to hear her stories of Gordon when he pops in to the restaurant. I love knowing that he's approachable (as long as he's not working) if we ever do spot him. If he's working, leave him alone. Pub and Grill actually has a sign with his favorite beer if you'd like to buy him one if he's there.

His Fish and Chips restaurant is tiny. Perfect for popping in and taking it back to your room. Not so much if you want to sit there and eat. There is seating but not much. Maybe 6 or 7 tables and some counter space, if memory serves. The mango curry sauce is yummy. I loved how the fish and chips weren't greasy even though they're fried.

I couldn't get my post to edit, but
for the Chicken Spaghetti for a
crowd, when you add the reserved
broth, start off with only one cup,
otherwise it might be too liquid.
You can always add the rest of it,
but you can't take it out ! :)
