Started working on the hors
d'oeuvres I'm doing for DH's
great niece's wedding. They
are having a caterer, but had
nothing lined up for the guests
between the end of the ceremony
and the start of the dinner - the
time when the bridal group will
be taking pictures ..... and you
all know how long THAT can take!
Bride's mother is DH's niece, who
stayed overnight with me when I
had my surgery, so this is some-
thing I can do. They anticipate
some 300 guests, so I'll stick
with 2 hot and 4 cold choices.
I've got three weeks to get all
the supplies, so my budget won't
take a huge hit all at once, and
two of the items stay in the
freezer until they are baked, so
I started on them today.
I need the cream cheese frosting to be a bit more stiff when pipping. Can I simply add powder sugar until I get the consistency I need?
