Good morning, geekers! Hope everyone is faring well in his pandemic. The numbers in PA don't seem to be rapidly climbing . . . yet. Not sure if that's because of non-testing or just people not getting it. There have been no cases discovered in my County, thankfully. I still don't understand the run on TP. The store where I work is totally sold out. Cases of water and eggs are gone and alot of meats are picked through. Most other things are still in stock. 

It's a dreary start to the day here. Rain off and on and chilly.

The reason people are buying out stores is because of the shortage that will come when the ability to replenish is slowed to a standstill.

That's the problem with medical supplies now. There is product out there, but it's in cargo containers in quarantine.

This is going to get worse before it gets better.

 

We had some wonderful storms go through last night. Beautiful lightning, house shaking thunder, torrential rain. It was awesome.

I went to Trader Joe's. Got there 20 minutes before it opened and there was a line to get in. Crazy. I told them how crazy they were to stand in the cold rain and got back in my car. Waited until a few minutes after it opened and got my stuff. I really only needed some milk and hot dog buns but I grabbed more dogs and a few other things while I was there. Skipped the aisle with the rice and beans because it was too crowded.

I am the rare Irish that dislikes that traditional boiled dinner.

DD went to her step grandfather's funeral. She is home yet. I cannot believe they scheduled it for today.

I like Shepherd's Pie. Guinnes stew is pretty good, too. I don't care for the corned beef and cabbage, although I love cabbage soup. Just not the corned beef.

I got away from that, years ago.

I put my corned beef, on a rack, in my roasting pan. Poured a beer in the bottom of the pan. I put the seasoning pack, on top of the beast...fat side up. Cover with foil, and roast in the oven. 350* for 2 1/2 hours. (IMHO, steaming a corned beef, beats boiling it. It doesn't get waterlogged, this way.)

I do my cabbage and carrots, on the stove. Sear it up, and let it simmer, a bit. Lots of butter, a bit of dill, and some salt and pepper!  I have half an onion, so that will go in, too. Yum!

I think I will just oven roast my potatoes, since the oven is already going.

Not traditional. But, we like it this way, better.wink

Oh, and some horseradish sauce, for dipping! Gotta have that!biggrin

Just an idea, for anyone else who doesn't like the "Boiled Dinner".smile

I don't do a traditional anything today.

I'm making oven baked cubed steak(it makes it fork tender), mashed potatoes, little balls of death others like the call peas, carrots, and collard greens.
