Good morning, Good Geeks!

Cool and windy in North Texas this morning.

Jupie isn't feeling well. Her tummy is upset. And I think she has a slight eye infection. We're taking her to the Vet at 3. I suspect we are going to have to postpone her surgery until she is feeling better. (She was scheduled to have eye surgery tomorrow.)cry

The kids are coming down for lunch. New York strips, and sea bass on the grill. Sherry rice and acorn squash for our sides.

That's the latest here.

Sherry rice sounds lovely. Can
you share the recipe?

I love cooking acorn squash in the
micro. Cut in half through the stem,
remove the seeds. Add 1 tablespoon
brown sugar and 1 tablespoon butter.
Nuke for 3 minutes, check, nuke for
another 2-3 minutes until it gives easily
when squeezed. Keeps its nice bright
orange color.

I haven't been on in forever. Between the new baby, the nursing job, and the daycare I'm going crazy. No time for myself. Haven't even had time to get my hair cut. Going tomorrow to get a haircut. Also, got a UTI so I will be going to the doctor tomorrow. Grand baby is one month tomorrow.

Had a wonderful breakfast at my favorite Maple Sugar Shack met the new GF (DS's). Went to Khols on the way home to return something to Amazon. Just as I go up to the counter, Amazon's server went down. I will have to try again later this week.

Nice day here cool but sunny. Will take the dog for a walk later.

We went for a drive. Intended to go to Skyline Drive, but the line of cars was for miles so we stopped for lunch in Front Royal and came home through Middleburg. It was beautiful, if I could tune out the whining in the backseat.

 It's the easiest side dish, ever! It goes great with everything...beef, pork, seafood. You name it, it is yummy!

Sherry Rice

Spray a 1 1/2 or 2 quart round casserole with Pam.

Drop in a stick of butter. 

1 cup of Uncle Ben's converted rice.

1 can of Campbell's Beef Consumme.

1 cup of cooking sherry. (Cheap wine that you want to get rid of, woks too!)

Don't stir it. Don't worry about it.

Just toss it in a 350-375 degree oven for 1 hour.

Easy, and so good!

 I've often thought one of those plexi glass bariers installed in police cars would be a great feature in family cars.

Hello everyone 👋🏻 Been pretty busy babysitting and getting ready for daughter and her family coming next month, weather has either been in the low forties to 80 degrees, today cold and rainy. Your rice sounds delicious fwm, thank you for sharing as well as your recipe for acorn squash momala. Sounds like you had a good time with your family fnw, glad you had a nice breakfast ikwtd and babies grow so fast njn.

I hope you feel better soon, SB.

Surgery for Jupiter, is postponed.

They ran her blood work again. And it looks fine.

But, they put her back on antibiotics, to kill the stomach bug.

So, we wait. And hope for the best.

Acorn Squash

(for the folks who like savory, rather than sweet.)

Cut those puppies in half, and clean out the seeds and gunk.

Melt some butter, toss in some garlic...let it simmer for a minute or two.

Brush it on, add a bit of salt and pepper...and a sprinkle of Paprika, for color.

Bake at 375, for 1 hour. So good, if you like savory, rather than sweet.smile

SB, feel better. I awoke around 2 this morning with cramping and feeling lightheaded. I went into the bathroom feeling like I was going to vomit but sat on the toilet and had massive diarrhea. It just poured out of me like I was peeing! UGH! Came out to the LR and sat on my chair and fell asleep for about two hours then went to bed and slept until 7:30. Feel ok throughout the day but not much energy. Only got two loads of laundry done and nothing else I'd planned to do today! UGH! Oh well, I have a fairly easy schedule Mon, Tues and Wed so those will be good days weatherwise to get stuff done outside that I want to.

Been binge watching some movies and just relaxing most of the day. Oh, I did scrub the kitchen floor. I went to shake the OJ container and apparently didn't have the lid on right. Yep, OJ everywhere. lol

Bought 6 HUGE fresh
cherrystone clams. so
I'm making Manhattan
Clam chowder - that's
the kind with a tomato
base, rather than cream.

Gave it a good kick-start
with a bottle of Clamato,
and a bottle of clam juice.
Added diced onions, home-
grown red potatoes, celery,
and thyme. I'll let it simmer,
and then chill it. It always
tastes better the second day.
