Good morning, Good Geeks!

Another warm day here. Not as much sunshine today. And, more humidity. Ugh.

Cold front tomorrow. I'll probably have to switch from A/C to heat, again. LOL! Yo-yo time in Texas.

I should probably do our taxes. Boo. I don't wanna!cry

Not much else is going on here.

 Good afternoon everyone!  I remember my dad always got his done early and waited to almost midnight and drove to the main post office to mail his taxe, and he wasn’t the only one. No way was the government going to make more interest off his money. It was his little rebellion lol!

I'm not quite that daring. I'll submit them around April 10th. I'm afraid if I go right to the last minute, the power, or cable will go out...and I'll be screwed.furious

Well, Paul is off today. So, I decided to do our corned beef and cabbage a day early.

That way, he'll be around to enjoy it, too.smile

I don't do the traditional, boiled dinner.

I bake/steam my corned beef...with beer at the bottom of my roasting pan. (Covered with foil, to get a nice, tender, corned beef.)

I pan fry, my cabbage and carrots.

And, I will oven roast, my potatoes. With some garlic butter/olive oil, and dill.

I play with it, every year.

It's fun!biggrin

I’m a terrible, 11% Irish and I don’t like corn beef and cabbage, beer or wear green.

I don't care for corn beef and cabbage but I enjoy a good Shepherd's Pie and Guinness Stew washed down with an Irish Coffee.
