2 months of 2024 gone already!

Easter is at the end of this month. I'm glad it's not on April Fool's Day like it was a few years back.

It’s going to be a busy month, going to stay with my east coast grandkids while their parents go to Europe for their ten year anniversary that they didn’t do because of Covid lockdowns. Plus planning Easter celebration for family at home and extended family the following weekend.

Plan ahead for all those hard
boiled, dyed Easter eggs !

Breakfast Daisies - serves 1
One slice lightly toasted white
bread, one hard boiled egg,
medium white sauce, one green
scallion

Make your medium white
sauce; keep warm
Peel and cut the egg in half
lengthwise; remove the yolks
to a small bowl. Slice the
whites into 12 wedges. Arrange
wedges just above the center of
the toast leaving a large space
in the middle. Mash the yolks
and spoon them into the middle
of the toast. Take the green
part of the scallion and slice a
skinny portion lengthwise, to
make the "stem". Pour the
white sauce over the daisy,
and serve.
